Creamy Baked Avocado Pasta

I am so excited to be partnering with Hass Avocado to share with you my new found love of avocados and all the health benefits they offer. As always, even though this post was compensated, all thoughts and opinions are my own.

As a kid, I ran away from anything that had avocado in it. It was one of those ridiculous situations where I had never really tried an avocado but was convinced I didn’t like it. Thankfully, as an adult, I became a little wiser and fell in love with avocados. I eat them on toast, in salads and, of course, in guacamole. I have also started cooking with avocados more and it all started with this creamy baked avocado pasta.

Remember when I said that these intros would get shorter and shorter as we neared closer to Christmas?  Yep, this is one of those…let’s party!  But, I do have a super sweet giveaway for you today before we start the party!

As a parent, going out to dinner can be stressful.  Sometimes there are a long waits to deal with or you might be worried that the options won’t be right for your kids picky palates.  With a busy three year old, we need to be really strategic in the way we plan our dinners out because we know we have a limited window for the dinner to be successful and not just one big mess.  In our area, we have a great resource called Teddy’s Table that is made for parents to help them find great restaurants to enjoy as a family.

A Playroom with Playful Wall Stickers

One of the things I loved most about this house when were looking at it is the extra room on the main floor.  It just seemed like the obvious place to create a playroom for our kids while they are young.  It houses toys and is the spot where they go for hours of fun!  We have tea parties and concerts and even a little quiet book reading.

Hey-oh! It is Monday. I hope you had a fabulous weekend.  Me…I went one a very short trip to the pool sans crutches.  Color me thrilled and super excited to be getting back to normal even if it is a slow process.
