Creamy Baked Avocado Pasta

October 21, 2014 By Shannah Coe 13 Comments

I am so excited to be partnering with Hass Avocado to share with you my new found love of avocados and all the health benefits they offer. As always, even though this post was compensated, all thoughts and opinions are my own.

As a kid, I ran away from anything that had avocado in it. It was one of those ridiculous situations where I had never really tried an avocado but was convinced I didn’t like it. Thankfully, as an adult, I became a little wiser and fell in love with avocados. I eat them on toast, in salads and, of course, in guacamole. I have also started cooking with avocados more and it all started with this creamy baked avocado pasta.

All the health benefits of avocado in a delicious pasta bake! #LoveOneToday #ad

Slow Cooker Cuban Beef

September 9, 2014 By Shannah Coe 4 Comments

Grab your Crockpot and get ready to make the MOST amazing recipe ever. This Slow Cooker Cuban Beef is so delicious, easy to make and full of flavor!

I have such a love affair with my Crockpot. Once the weather starts to cool a little bit and I move away from grilling everything from burgers to fruit, I start using my slow cooker more and more. Mathlete isn’t always a huge fan of chicken cooked in the crockpot so I tend to stick to beef more often.

Crockpot Cuban beef is the BEST slow cooker recipe. So easy and so much flavor.

Sausage and Pepper One Pot Pasta Recipe

July 1, 2014 By Shannah Coe 4 Comments

In my dreams, summer is a time to slow down and relax.  Days are spent lounging by the pool and nights are spent with delicious dinners on the deck. I’m a good dreamer, right? Reality is far different around here. Gymnastics practices are longer, camp carpools are added into the mix and getting dinner on the table becomes so much harder.  Oh, add the heat into that mix and turning on an oven or stove and cooking just loses its luster. That is where the beauty of something like this sausage and pepper one pot pasta comes into play.  It is one pot and a meal that cooks in under thirty minutes. Sound too goo to be true? Well,  you definitely aren’t dreaming 🙂

One pot is all this recipe takes to make an amazing pasta dish the whole family will love.

Buffalo Shrimp Tacos

May 27, 2014 By Shannah Coe 2 Comments

Buffalo chicken gets a ton of rotation in our house.  I love all of the flavors and of course chicken is always a big hit.  But, I was searching for something different the other night and decided to change it up and make buffalo shrimp tacos in place of our regular chicken version.

Quick and easy to make, these buffalo shrimp tacos would make such a perfect dinner option!

Citrus Pork Chops with Apple, Orange and Fennel Salad Recipe

Collective Bias Disclosure

Citrus Pork Chops with Apple, Orange and Fennel Salad #creativebias #recipe #spon

We eat a lot of chicken…like a ridiculous amount of chicken…in our house.  I buy chicken breasts in bulk so that I always have them around.  This past week, I wanted to break out of our chicken routine.  So, on our weekly trip to Costco (yes, weekly), I decided to pick up a package of their pork chops along with my usual fruit, water, chicken and milk.  I don’t think a week goes by that something at Costco doesn’t tempt me to go off of my shopping list!

Cleaning and Cooking in the Kitchen

January 4, 2014 By Shannah Coe 36 Comments

I love to cook! In fact, if I had my way, I would totally spend all of my free time cooking in the kitchen. I hesitate to call myself a chef though because what I do in the kitchen is definitely more playing than anything of actual skill.

Of course, with playing around in the kitchen, comes a bunch of big messes.  I’ve been known to knock over full boxes of quinoa onto the floor or have little pieces of pasta fall onto the floor when I break the spaghetti in smaller pieces for my kids to eat.  There is a little corner in my kitchen that gets all the little extras that fall and don’t get noticed because I am focused on the food and not the clean up.  Then, when I run the little mini vacuum around the kitchen to do our nightly cheerio pick up, that food just gets bypassed because it is too far in the corner for the little vacuum to reach.

Chicken Sausage and Vegetable Saute

July 1, 2013 By Shannah Leave a Comment

One of my favorite things about spring and summer is the beginning of the Farmer’s Market. Saturday mornings are filled with strolls through the two closet looking for delicious fruits and vegetables.  One of my recent visits was the inspiration for a quick one dish meal: Chicken Sausage and Vegetable Saute.

Salsa Verde Chicken Enchiladas

June 19, 2013 By Shannah 3 Comments

This post first appeared as part of my contributor series over at Sugar Bee Crafts.

Recently, I decided to try my hand at making salsa verde!  I was so excited with how it turned out…delicious!  It made a lot though so I looked for ways to use it beyond chips and salsa for snacks.  I figured why not replace the regular salsa and make salse verde chicken enchiladas!

Kid Friendly Food: Meatloaf Muffins

June 12, 2013 By Shannah 17 Comments

Kids are a funny bunch. They can be the pickiest eaters on the planet and forget trying to get them to eat any vegetables. These kid friendly meatloaf muffins are a perfect way to make a classic dinner more kid friendly!

My kids love finger foods of just about any type.  I decided to try and make a few of favorite homemade meals into a more kid friendly size.  When the macaroni and cheese “cupcakes” were such a big hit, I decided to try turning our regular meatloaf into little muffins. {You can call them cupcakes if you want because most kids will eat anything that is called a cupcake.}

Yogurt Marinated Chicken with Almond Basmati

June 3, 2013 By Shannah 13 Comments

Dinner can be hard to get together some nights. I combined #SuccessRice with almonds and served it with Yogurt Marinated Chicken for an easy dinner!

I love to cook.  That is probably pretty obvious if you hang out around here. I am always looking for new ideas and recipes to share with my family.  One staple most of our family meals have in common: rice.
