Summer Grilled Corn Salad is the perfect option for your summer BBQs and picnics! This make ahead recipe is filled with fresh summer produce and is ideal for a hot summer day! This corn salad recipe is so easy to make and so refreshing from all the corn, tomatoes, red onion, cilantro, and goat cheese combined with a dressing!

BBQs, picnics and tailgates are the perfect places to bring this grilled corn salad. This easy corn salad recipe is perfect to make ahead and just grab out of the refrigerator when you are ready to enjoy it.

This grilled corn salad uses a mixture of yellow and white corn but use whichever you prefer. I like the subtle sweetness the white corn adds to the salad but, typically, yellow corn is much easier to fine. Both taste great when grilled and the dressing for this summer corn salad is perfect with it.

Don’t worry if you wake up and weather isn’t perfect for grilling corn. Toss the corn into the oven and easily turn this into a delicious roasted corn salad instead. You will still get all the delicious flavors in the salad.

Grilled Corn Salad Recipe

I love this grilled corn salad recipe with crumbled goat cheese. If you prefer feta, that would be a very easily replacement to make.

Grilled corn salad is the perfect summer corn salad recipe. So easy to make and packed full of flavor.

Ingredients
  • 4 cups grilled corn
  • ½ cup red onion diced
  • 2 cups cherry tomatoes quartered
  • ¼ cup chopped cilantro
  • ½ cup crumbled goat cheese
Dressing:
  • 1/4 cup lemon juice
  • ½ tsp lemon zest
  • 1 tsp cumin
  • 1 tsp chipotle chili powder
  • 3 Tbsp olive oil
Instructions
  1. In a bowl, whisk together lemon juice, lemon zest, cumin, chili powder and oil.
  2. In a large bowl, combine corn, cilantro, onion and tomatoes. Pour in dressing and toss to combine. Fold in goat cheese.
Recipe Notes
  • If the weather isn't great, you can easily turn this into a roasted corn salad by roasting the corn in the oven versus grilling.

    I’m all about corn now that it’s in season. I’ve been making a lot of soups and dips but have yet to try a salad or salsa. This is some good inspiration!
