Pumpkin Snickerdoodle Sandwich Cookies

Very few food items say fall like pumpkin, cinnamon and nutmeg.  Combine them all together and you have fall in a dish…or in this case on a cookie sheet.  I make some pumpkin cream cheese frosting and used it to make pumpkin snickerdoodle sandwich cookies.  So, grab some apple cider and let’s start enjoying these delicious cookies.

Pumpkin Snickerdoodles with Label

What You’ll Need:
8 oz cream cheese, softened
8 Tbsp (1 stick) of butter, softened
1/3 cup pumpkin puree
3 1/2 cups powdered sugar
1 tsp cinnamon
1/2 tsp nutmeg
Snickerdoodle cookies {ya’ll already know I am hardly a baker so here is the recipe I used for my cookies}

Let’s Make It:

1)  In a mixer, beat the cream cheese and butter until well combined.

2)  Grab your pumpkin and add it to the cream cheese mixture.  Beat to combine.Canned Pumpkin_wm

3)  With the mixer running, slowly add the powdered sugar in batches.  Allow each batch to be incoporated before adding another.   Add in cinnamon and nutmeg and beat until combined.

4)  Spread icing in between snickerdoodle cookies to create a sandwich.  Try not to eat the entire batch.

Ingredients

    1. Haha…you are so right. It is like the internet explodes with pumpkin around October 1st. These aren’t super pumpkin-y so you can just pretend there is only cream cheese frosting in the middle ๐Ÿ˜‰
