Pumpkin Icing Filled Snickerdoodles

  • 8 oz cream cheese, softened
  • 8 Tbsp (1 stick) of butter, softened
  • ⅓ cup pumpkin puree
  • 3½ cups powdered sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • Snickerdoodle cookies
  1. In a mixer, beat the cream cheese and butter until well combined.
  2. Grab your pumpkin and add it to the cream cheese mixture. Beat to combine.
  3. With the mixer running, slowly add the powdered sugar in batches. Allow each batch to be incorporated before adding another. Add in cinnamon and nutmeg and beat until combined.
  4. Spread icing in between snickerdoodle cookies to create a sandwich. Try not to eat the entire batch.
