Italian One Pan Chicken Recipe

This Italian one pan chicken recipe is a easy and delicious dinner. The best part is that it cooks in one pan so clean up is a breeze.
Ingredients
- 4 6-ounce boneless, skinless chicken breasts
- 1/2 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1 1/2 Tablespoon Italian seasoning
- 1/4 teaspoon crushed red pepper
- 2 Tablespoons oil
- 1 onion, diced
- 1 clove garlic, minced
- 1 15-ounce can fire roasted tomatoes
Instructions
- In a small bowl, combine garlic powder, cayenne pepper, salt and nutmeg. Stir to combine. Sprinkle on both sides of chicken breast.
- Add 1 Tbsp of oil to skillet pan. Heat over medium high heat. Add chicken and cook until browned; about 2-3 minutes on each side. Transfer to plate.
- If needed, add remaining 1 Tbsp oil to the pan. Add onion and sauté for 5 minutes. Add garlic and cook for an additional minute. Stir in Italian seasoning and crushed red pepper. Cook for 1 minute or until fragrant.
- Add tomatoes and 1/4 cup water. Return chicken to pan and bring to a boil. Reduce heat to simmer and simmer for 15 minutes or until chicken is cooked through.
Notes
- The chicken does not need to be cooked through when browning. It will continue to cook once added back into the skillet to simmer.
