Eggnog and Pumpkin Mousse – Layered Desserts

I’m a sucker for an individual sized dessert.  Make it layered and pretty and serve it in a small dish and I am all in.  That is the idea behind my layered eggnog and pumpkin mousse cups.  I wanted something that could easily be served individually but also looked pretty.  Of course, tasting good was a must too.Pumpkin Mousse Cups with Label_wm

These mousse cups are so easy to make and you can easily put them together the day before and just keep them covered until serving time.

What You’ll Need:
Eggnog Mousse
– 1 large box of instant vanilla pudding
– 1 1/2 cups eggnog
– 1/2 cup milk
– 4 oz cool whip
Pumpkin Mousse
– 2 oz marscapone cheese
– 1 can pumpkin
– 3/4 cup milk
– 1 small box instant vanilla pudding
– 1 1/2 cups cool whip

Let’s Make It:
1)  Mix eggnog and milk together.  Whisk in large box of vanilla pudding and whisk for 2-3 minutes.  Set aside for 5 minutes to thicken.  Fold in cool whip and refrigerate while you make the pumpkin mousse.

2)  Blend the marscapone cheese in the food processor until smooth.  Add in pumpkin and milk and pulse until combined.  Stir in pudding.  Let sit for 5 minutes.  Fold in cool whip.

3)  In a small glass {like a juice glass}, add 3 1/2 Tbsp pumpkin mousse.  Top with 3 1/2 Tbsp eggnog mousse.  Then, add an additional 3 1/2 Tbsp pumpkin mousse on top.  Cover and refrigerate for 1-2 hours.
