Tomatillo Chicken Enchilada Roll Ups #kraftrecipemakers

We all know that getting dinner on the table can be tough.  If you have kids, a full time job or even just a lot of activities, a home cooked dinner tends to fall further and further down the priority list just from sheer lack of time.  Thankfully, smart people like the ones who work at Kraft think of ways to help a momma {or daddy} out!  Their newest time saver, Kraft Recipe Makers, are perfect for helping you get a jumpstart on a delicious meal.  You can either go with the recipe printed right on the back of the box or create something new like I did with these tomatillo chicken enchilada roll ups.

Of course, I couldn’t just give you a recipe for chicken enchiladas. That is already right there on the box.

#shop Kraft Recipe Makers Box_wmI knew I wanted break out of our normal dinner rut while also keeping the meal simple and easy to prepare.  So, I did what I love to do best and combined two different types of cuisines: Mexican and Italian.

What You’ll Need:
1 box of Kraft Verde Chicken Enchilada Recipe Makers
1 cup shredded, cooked chicken {go ahead and shred it with your mixer}
1 cup black beans, rinsed and drained
1 cup corn
1 small onion, finely chopped
8 cooked lasagna noodles, laid flat
1 cup shredded queso blanco cheese

Let’s Make It:
1)  Preheat oven to 350 degrees.  Spray a 9×13 baking dish with cooking spray.  Spread 1/2 of the finishing sauce into the bottom of the prepared pan.

2)  In a medium sized bowl, combine the chicken and the creamy ranchero filling sauce.  Stir well to combine.

3)  In large bowl, combine the beans, corn and onion and stir well.  Add chicken mixture to bowl and stir.

4) Working one by one with each lasagna noodle, spread filling along the inside of the noodle, top with 1 Tbsp of shredded cheese and then roll up.

Place the rolled noodles in the prepared baking dish. Top with remaining finishing sauce and shredded cheese.

5) Bake enchilada roll ups in a 350 degree oven for 20 minutes or until cheese is melted. Serve with sour cream, avocado slices and green onions.

  1. Oh the good old times when I as eating fast boxed food because I had no time to cook – I used to really really love JKS, they have some awesome products (still love their coffee, btw).

    Yumm.. looks amazing.. I never had roll ups, sure looks great and something I think everyone in my family would love.. we tried the Kraft Recipe Makers a few weeks ago and LOVE them.. aren’t they amazing and so simple to create a wonderful meal…

    1. Roll ups are one of my favorite meals. They are fun to make and easy to eat too. Which Kraft Recipe Maker did you try? I am interested in tasting all of the flavors.

  3. I have been seeing the Kraft recipe makers in the store and on the internet. I think it is a great idea to have one of these in the pantry for emergencies! It is nice to know there is an easy meal close at hand.

    1. They are definitely an awesome product for helping get a meal on the table fast. You can easily use the recipe on the back of the box or create a new one. Searching #kraftrecipemakers will also give you a bunch of ideas from other bloggers 🙂

    Yum! Your pictures are so awesome I want to eat again, and I have already had my dinner. Kraft Recipe Makers, huh? I haven’t ever used them, but if they can help me turn out a dinner entree like this one, I am all for them. I wonder if I can flip them gluten free? Don’t worry, I will figure it out!

    1. Aww thanks! The Kraft Recipe Makers are a fabulous product! I bet you could find a rice lasagna noodle to make them gluten free.
