Macaroni and BBQ Chicken Pizza – Budget Friendly Meals

So, I am going to give you a second to digest the title of this post. I’m sure, at first, it seems a little odd. Well, this Macaroni and BBQ Chicken pizza came about on a day when I wanted to use food we already so I a) didn’t have to make a trip to the store and b) didn’t have to spend any additional money on food since I had already spent our food budget for the week/month {I know the 1st and 15th can be particularly sticky times of the month for most people’s budgets}. I called out to the fam and asked “what do you want for dinner?” The response was: BBQ chicken, pizza and macaroni and cheese. So, I decided to put them all together and this crazy but so delicious pizza was made. Using what I had and focusing on low cost ingredients made this truly one of my budget recipes.

This pizza may look a little crazy but it combines the best of every meal into one delicious pizza.

Garlic and Herb Pork Kabobs

We are coming down to the last days of the regular grilling season and I am trying to squeeze in every chance to grill that I can. Of couse, my available cooking time is almost nonexistent right now so I need things that can cook fast and don’t require a lot of marinade time or prep work. That is one of the reasons I love the Smithfield marinated pork products…they do all the work for you. I recently picked up one of the garlic and herb tenderloins and brought it home to grill for dinner. 

Yummy kabobs in under 30 minutes...this is an awesome weeknight meal!

One Pot Chicken Enchilada Pasta

I think every family has a go to food that they make over and over because everyone loves it. In our household, that is pasta! While I may prefer something like a butternut squash and sage pasta and Mathlete likes the sausauge and pepper version, we can all agree that pasta is what we want for dinner. Plus, pasta cooks fast making weeknight meals way easier to actually get on the table on time. How about we make it EVEN easier though by making a one pot chicken enchilada pasta?

Anything I can make in only one pot is winner for me. This pasta looks amazing.

Cheesy Beef and Potato Casserole and Bonus Box Tops

We all know it is time to go back to school. According to my Facebook page, some people have already started school. Once those first days of school start, it is a slew of after school activities, homework and busy nights trying to squeeze everything in. One thing that becomes harder to squeeze in is a home cooked meal. I’ve got the solution for that with my recipe for cheesy beef and potato casserole that is super easy and really delicious.

It is really easy to select 6 {or more} General Mills® products because they include delicious cereals like Cheerios™ and Lucky Charms™ that your family already loves. It also includes the Betty Crocker™ specialty potatoes I used as the base for my easy weeknight casserole!

What You’ll Need:
1 box Betty Crocker™ Cheesy Scalloped Potatoes
1 tsp oil
1 lb ground beef
1 onion, diced
1 bell pepper, diced
1 clove garlic, minced
3 Tbsp butter
2 cups boiling water

Let’s Make It:
1) Preheat oven to 350 degrees. Spray a 9×9 square baking dish with non-stick cooking spray.

2) Heat oil in medium sized skillet over medium heat. Add onion, garlic and pepper and saute for 1-2 minutes. Add ground beef and cook, stirring to crumble, for 5-7 minutes or until done. Drain.

3) In a large bowl, combine sauce packet from potatoes with boiling water and butter. Stir until butter is melted. Stir in potatoes and beef mixture. Pour into prepared baking pan. Cover with foil.

4) Bake in oven for 15 minutes. Remove foil and bake an addition 5-10 minutes or until potatoes are tender and sauce is thickened.

This casserole was a huge hit with our family and I liked how quickly I could make it on a busy weeknight. It will be perfect for when we are back in school and all of our weeknights are super busy.

Orecchiette Pasta with Sausage and Parmesan

I love pasta.  Who doesn’t right?  It can be used in anything from a side dish or become a star in a main course.  I tend to skip the more traditional pasta in red sauce dishes though and look for ones that get most of their flavor from simple ingredients.  When I made orecchiette pasta with sausage and Parmesan, the freshness of the ingredients were where the dish got almost all of the flavor.  Yummy!

Chicken Enchilada Stuffed Peppers Recipe

Make a healthier take on a Tex-Mex favorite with this Chicken Enchilada Stuffed Peppers recipe filled with chicken, beans, vegetables & melted cheese!

 
I was so happy with how this recipe turned out that I wanted to share it here with you all as well.  The idea for this recipe came about because of my husband’s love of enchiladas and my desire to be a little healthier in the way I eat.  Chicken Enchilada Stuffed Pepper
 
We won’t call it clean eating because I am far from perfect when it comes to that. This is really just more a focus on increasing our vegetable intake when possible. I created a Chicken Enchilada Stuffed Peppers recipe by substituting peppers for traditional tortillas in this recipe.
 
This is the best chicken enchilada recipe because it allows me to enjoy these shredded chicken enchiladas without feeling like I am piling on the carbs and calories! This stuffed bell peppers recipe is filled with so much deliciousness but they are pretty healthy too thanks to all of the vegetables!
