Tomatillo Chicken Enchilada Roll Ups #kraftrecipemakers

- 1 box of Kraft Verde Chicken Enchilada Recipe Makers
- 1 cup shredded, cooked chicken {go ahead and shred it with your mixer}
- 1 cup black beans, rinsed and drained
- 1 cup corn
- 1 small onion, finely chopped
- 8 cooked lasagna noodles, laid flat
- 1 cup shredded queso blanco cheese
- Preheat oven to 350 degrees. Spray a 9x13 baking dish with cooking spray. Spread ½ of the finishing sauce into the bottom of the prepared pan.
- In a medium sized bowl, combine the chicken and the creamy ranchero filling sauce. Stir well to combine.
- In another bowl, combine the beans, corn and onion and stir well. Add chicken mixture to bowl and stir well.
- Working one by one with each lasagna noodle, spread filling along the inside of the noodle, top with 1 Tbsp of shredded cheese and then roll up.
- Place the rolled noodles in the prepared baking dish. Top with remaining finishing sauce and shredded cheese
- Bake enchilada roll ups in a 350 degree oven for 20 minutes or until cheese is melted. Serve with sour cream, avocado slices and green onions.
