Paleo Chicken Salad

Guess what day it is?! It is Paleo Monday. I am so excited to share with you one of my absolute favorite new recipes this week. I’ve been searching for a way to replace the chicken salad that I loved for lunch each and every day before going Paleo {er-ish}. Well, I think I finally done it. This paleo chicken salad is to die for and is so perfect for Spring and Summer lunches. 

Paleo Chicken Salad

I had seen a bunch of recipes online for chicken salad that used a paleo mayonnaise. The challenge for me is that I have traditionally been a greek yogurt chicken salad fan where the mixture is mostly Greek yogurt with a little mayo and mustard mixed in. Obviously, Greek yogurt won’t work with Paleo so I had my work cut out of me. I finally found the perfect homemade substitute and was able to perfect my chicken salad. 

Depending on what you like in your chicken salad, you can totally customize this. I’m a fan of dried cranberries, nuts and grapes so you’ll find all that in mine. Feel free to change almonds to walnuts or skip anything that doesn’t suit you. 

Paleo Chicken Salad Ingredients:

3 cups cooked chicken breast, diced
1/2 cup diced red onion
1/3 cup grapes, halved
1/2 cup dried cranberries
1/2 cup sliced almonds
1/3 cup Paleo “yogurt”
2 Tbsp Paleo mayonnaise
1 Tbsp yellow mustard
1 Tbsp lemon juice
Salt and Pepper

Let’s Make It:

1) In a large bowl, combine chicken through almonds. 

2) In a small bowl, combine yogurt, mayo, mustard and lemon juice. Stir well. 

3) Add yogurt mixture to chicken and stir to combine everything. Season with salt and pepper. Refrigerate until ready to use. 

I totally eat this chicken salad straight out of a bowl but you can put it over greens for an extra hit of vegetables too. If you have a favorite Paleo wrap, throw this in there and it would make a great sandwich.

Ingredients
