Gluten Free Chicken and Kale Salad

I have a good friend {amaze-ball friend, really} who recently had to go gluten free for health reasons.  Now, I know that these days there are all kinds of gluten free products out there to help people make the transition but it can still come as a shock to your system.  So, in an effort to help and be supportive, I decided that I would start including more gluten free options here on the blog.  I find that lunch is typically the most difficult meal for me to make specialized in any way because it usually eaten at the office so I decided to focus on lunch first and made this gluten-free chicken and kale salad topped with a carrot cucumber dressing.  Not only is it gluten free but it is super healthy and delicious too.

I really love how this salad came together.  It is full of fresh ingredients and makes a fantastic lunch!

What You’ll Need:
– 2 Chicken Breast Fillets, cooked and diced
– 1 cup shredded Brussels sprouts
– 1 cup torn kale leaves
– 1/2 cup radish matchsticks
– 1 orange, cut into pieces
– 1 carrot
– 1 cucumber
– 4 Tbsp fresh lemon juice
– 4 Tbsp unseasoned rice vinegar {check the label}
– 2 tsp grapeseed oil

Let’s Make It:
1)  In a large bowl, combine Brussels sprouts, kale and radishes.  Toss to combine.

2)  In a blender or food processor, combine carrot and cucumber.  Pulse until finely chopped.  With motor running, add lemon juice, rice vinegar and grapeseed oil.  Let run for about 1 minute or until dressing is well combined.#ad Gluten Free Kale Chicken Salad with Carrot Cucumber Dressing #CookItGF #recipes #cbias
