Between doing Whole30 and trying to eat Paleo the rest of the time, we eat a lot of cauliflower rice on our house. I like to do most of our meal prep on Sundays to make getting dinner done much easier during our busy weeknights but cauliflower rice was one of those that I just never could do ahead of time. Cauliflower just plain stinks once you cut it. I saw all over Facebook how Trader Joes had frozen cauliflower rice but none of our local stores EVER seem to have it. So, I decided I would figure out how to freeze cauliflower rice at home so I could still do my meal prep on Sundays but not have my house stink all week.
I know this sounds super simple when you first think about it but it definitely took me a couple of tries to get it just right so that, when I cooked it, it didn’t turn all mushy and gross.
Step 1: Cut your cauliflower into small florets.
Step 2: Using the food processor, pulse the cauliflower until it is rice like texture. Transfer to paper towels and let sit for 5-10 minutes.
Step 3: Please rimmed baking sheet in freezer for 15 minutes.
Step 4: Spread cauliflower rice in single layer on cold baking sheet. Place in freezer for 15 minutes.
Step 5: Remove cauliflower rice and transfer from baking sheet to freezer bag. Return to freezer.
When you are ready to cook the rice, remove it from the freezer and steam or pan cook as your normally would. No need to thaw or anything! Now, I can skip the trips to Trader Joes hoping to find the frozen cauliflower rice because I can easily make my own. It works great too when cauliflower is on sale because I can stock up.
