Thai Green Curry Chicken Burritos

Let’s talk about all the things I can throw into a tortilla, shall we?  This week is Thai green curry chicken.  Yep, you read that right: Thai…Burritos. This whole crazy burrito thing start when I stopped in at Giant the other day to pick up rolls only they carry.  I was struggling with how to spice up our chicken for dinner and saw Campbell’s skillet sauces. I love anything that makes dinner easier but actually adds good flavors to the meal so I grabbed the Thai green curry version and hit the checkout line.  Of course, I rarely do anything just as the package says and so their suggestion to serve the meal over a rice totally went out the window in my kitchen.

The Campbell’s skillet sauce was definitely full of flavor and I think we would have loved the dish just as the package suggests too but for some reason, I just really wanted a burrito that night!  I added peppers and onions to the chicken and sauce.  Then, I stuffed it in a tortilla with some jasmine rice to make Thai green curry chicken burritos.  Oh yum!

Thai Green Curry Chicken Burritos
Servings: 6

Ingredients
  • 1 Tbsp oil
  • 1 lb chicken breast cut into strips
  • 1 red bell pepper seeded and sliced
  • 1 onion sliced
  • 1 pouch Campbell's Thai green curry sauce
  • 1 1/2 cup cooked Jasmine rice
  • 6 to rtillas
  • Green onions {optional}
Instructions
  1. In a large skillet, heat oil over medium heat. Saute peppers and onions for 5 minutes. Remove from pan.
  2. Add chicken to pan and cook until done; about 10 minutes. Pour in skillet sauce and add peppers and onions. Simmer on medium for 5 minutes.
  3. Heat tortillas in microwave for 20 seconds. Fill each tortilla with 1/4 cup Jasmine rice and 1/4 - 1/2 cup chicken mixture. Roll burrito and top with sauce from skillet.

The awesome thing about this meal is that it was done in under 30 minutes!  Yep, under 30 minutes to get a delicious, flavorful Thai burrito.  Bet you don’t say that every day? #EasyPrepMeals are totally my thing these days as the weather warms up and I want to be outside enjoying it but also still able to have a yummy dinner with my family.

There are lots of other sauces that I can’t wait to try now!  On May 3rd, many Giant/Stop & Shop stores around the nation will be holding In-Store demos of the Campbell’s skillet sauces and slow cooker sauces.  Be sure to call your store to see if they are one of them and then stop by on May 3rd.   In the meantime, you can search #EasyPrepMeals and #CollectiveBias for more recipe ideas using Campbell’s skillet or slow cooker sauces.

    we are seriously blogging sisters!! I’m doing this post next week and my pitch was to use the green curry sauce and to wrap up the chicken and veg in eggroll wrappers ;o) So similar… these look really tasty though, so now I’m super excited to cook up mine ;o) pinned!
