Grilled Strawberry Basil Pound Cake

Pound cake is one of those super simple cakes to make that goes well with just about anything. We usually keep one around the house so we can top it with fresh fruit for a quick dessert. I love the combination of strawberry and basil together so I created grilled strawberry basil pound cake for an extra special dessert. 

Grilled Strawberry Basil Pound Cake

I was a total lazy baker for this recipe and started with a boxed pound cake mix. Then, I simply stirred in chopped basil before baking. The grilled strawberries on top make it absolutely amazing.

Grilled Strawberry Basil Pound Cake:

1 box pound cake
3 eggs
1/2 cup warm water
1  cup basil leaves, divided
3 Tbsp oil
2 cups strawberries, hulled

Let’s Make It:

1) Combine 1/2 cup basil leaves and warm water. Let sit for 15 minutes. Discard basil. Finely chopped remaining 1/2 cup basil leaves.

2) Prepare cake mix according to package directions using the basil water in place of the water in the box recipe. Stir in 1/2 cup chopped basil leaves. Bake according to package directions. Remove from oven and let cool.

3) Heat grill pan over medium heat. Add strawberries in batches and grill until heated and softened. Serve pound cake topped with strawberries.

If you prefer to grill the strawberries on the grill, I recommend using a grill basket or threading them onto skewers. Just be sure to soak an bamboo skewers for 30 minutes before using. 

This cake is so light and perfect for summer. Plus, what could be better than a dessert topped with fresh summer berries.

Ingredients
