Grilled Fruit Kabobs

June 18, 2014 By Shannah Coe 11 Comments

It is only mid-June but I’ve talked a lot about how I like to cook on the grill already.  So, it is probably no surprise that today’s recipe is for grilled fruit kabobs.  These grilled fruit kabobs are special though because they are basted with a citrus mint glaze while they are grilled which gives them an extra punch of flavor.

Amazingly delicious grilled fruit kabobs are perfect for summer. They are marinated in a citrus mint syrup for an extra tasty flavor.

The great thing about fruit kabobs is that they are so versatile.  You can pick just about any fruit that is on sale and put it on the grill.  For these, I choose some stone fruits along with strawberries and pineapple.  Of course, the mint is a key ingredient to making these extra delicious.

Ingredients
  • 2 peaches cut into large pieces
  • 3 cups pineapple chunks
  • 3 cups hulled strawberries {halve large ones}
  • 3 nectarines cut into large pieces
  • Marinade;
  • 2 cups pineapple juice
  • 3/4 cup orange juice
  • 1/2 cup cider vinegar
  • 1/3 cup lime juice
  • 3 Tbsp finely chopped mint
Instructions
  1. Combine pineapple juice, orange juice and cider vinegar in a small saucepan over high heat. Bring to a boil and then reduce heat. Simmer for 25 minutes. Separate 1/2 cup of juice mixture and cool. Reserve remaining juice separately. Add lime juice and mint to the 1/2 cup of cooled juice mixture.
  2. Thread fruit onto skewers. Pour cooled juice mixture with mint over fruit and turn to coat.
  3. Heat grill to medium heat. Place skewers on grill and brush with mint juice mixture while cooking. Cook for 2-3 minutes before turning. Brush with mint juice mixture and cook for another 2-3 minutes. Serve with reserved juice on the side.

Grilled fruit kabobs are one of my favorite summer desserts! The citrus mint glaze on these make them even more delicious.Grilled fruit kabobs with citrus mint glaze

I took my fruit off the skewer and added a dollop of whipped cream on top before eating. Yummy!

These citrus mint glazed fruit kabobs are the perfect summer treat! Love the idea to add a little bit of whipped cream too.

Have you grilled fruit before?  Are you a fan of grilled desserts?

    I love this idea because I have an oral allergy to most fruits (sucks), but once they are cooked, that magically goes away! I need a grill, and then I need to try this!
