Spicy Tilapia Ceviche

I love ceviche but don’t get the chance to eat it very often. I had been dreaming of it ever since we went on the Miami Culinary tour during Blogher Food so I dragged Mathlete to the Mexican place that I usually order it from. They have the most amazing shrimp ceviche. Well, #sadpandaface, they don’t have it anymore! The only ceviche they have has scallops and I really dislike scallops. So, I decided I was going to make it at home and made spicy tilapia ceviche for dinner one evening.

Grilled Fruit Kabobs

It is only mid-June but I’ve talked a lot about how I like to cook on the grill already.  So, it is probably no surprise that today’s recipe is for grilled fruit kabobs.  These grilled fruit kabobs are special though because they are basted with a citrus mint glaze while they are grilled which gives them an extra punch of flavor.

Amazingly delicious grilled fruit kabobs are perfect for summer.  They are marinated in a citrus mint syrup for an extra tasty flavor.

All through the winter, I had oatmeal for breakfast almost every morning.  It was just what I needed on a cold day after a long commute to work.  Plus, the cafe in our building sold it so I didn’t actually do any work to get my breakfast.  As you can imagine, that adds up fast though.  Now that the weather is getting warmer, I have been looking for a replacement that I could easily make at home in the 5 spare minutes I have each morning.  Carnation Breakfast Essentials offers a few delicious flavors and are the perfect smoothie starters so I decided give one a try in my citrus vanilla breakfast smoothie.
