Coconut Lime Oreo Truffles

Oreo cookies are one of those things you will almost always find in our house. We buy the little snack packs in the giant size from Costco to put in lunches and will usually have just a regular package in the house for the random sweet snack. At the store the other day, I saw the new Limeade flavor and knew I had to try them. Of course, as I do with most Oreo flavors, I decided “bake” with them and made coconut lime Oreo truffles using the new flavor.

Yummy...these limeade oreo truffles are no bake and taste a lot like key lime pie!

These oreo truffles are so good. The best part is how easy they are to make. There is almost no cooking {just melting chocolate in the microwave which takes less than a minute} and all you need is a food processor, a cookie sheet and a microwave to make them. I use my cookie dough scooper to scoop out the Oreo mixture onto the pan but you can easily just use a spoon with your hands. If she is interested, I’ll get H involved and let her do the scooping and rolling.

Ingredients
  1. 1 package Limeade Oreo cookies
  2. 8 oz cream cheese, softened
  3. 1 tsp lime juice
  4. 1 tsp lime zest
  5. 1/4 cup toasted coconut
  6. 1 package white chocolate chips
Instructions
  1. In a food processor, pulse Oreos until mostly crumbs. Add cream cheese, lime juice, lime zest and toasted coconut to the food processor bowl. Turn on and run until mixture is smooth.
  2. Line a large cookie sheet with parchment paper. Scoop 1 - 1 1/2 Tbsp of the mixture and form into a ball. Repeat until no Oreo mixture is left. Place in freezer for 10 - 15 minutes.
  3. Pour white chocolate chips into large bowl. Microwave for 30 seconds. Stir well. Microwave, in 10 second intervals, until melted and smooth. Remove Oreo balls from the freezer and dip into white chocolate. Top with toasted coconut if desired and refrigerate.

These Oreo truffles have a little bit of a key lime pie taste to them and I love it! They are great with extra toasted coconut sprinkled on top or just plain. I even caught someone in our house eating the ones that hadn’t made it into the white chocolate quite yet and proclaiming how good they were.
