Breakfast Burrito Enchiladas

Breakfast is one of those meals that is always super crazy in our house. There is a ton of hustle and bustle and everyone seems to need something at the same time. It can make actually making breakfast and having everyone enjoy it pretty difficult. I turn to recipes that I know I can throw together and let cook while I deal with finding socks, packing backpacks and making sure the fish is fed. One of our favorites is breakfast burrito enchiladas. 

Breakfast Burrito Enchiladas

These enchiladas start with pre-made breakfast burritos from El Monterey. I put them in a casserole dish and top with enchilada sauce and cheese before baking them in the oven. They are done by the time the kids are all dressed and they can sit right down and enjoy them. I love it because they are getting a hearty breakfast that I didn’t have to be a line cook to produce. 

Plus, the burritos come in several different varieties so I know there will be one each of my picky family members will like.

Ingredients for Breakfast Burrito Enchiladas:

3-4 El Monterey breakfast burritos
1/2 cup enchilada sauce
1/2 cup shredded cheese

Let’s Make It:

1) Preheat oven to 350 degrees.

2) Spray casserole dish with nonstick cooking spray. Place burritos on dish. Top with enchilada sauce and cheese.

3) Bake for 30 minutes or until heated through.

With Cinco de Mayo coming up on Tuesday, I printed off the coupon and stocked up on burritos so I can make this for Tuesday morning. It will be a fun way to celebrate Cinco de Mayo that doesn’t take a lot of extra time or effort in the morning.
