Boozy Baking: Strawberry Prosecco Cupcakes

By now, I am sure you guys are all thinking that I am some kind of super wine-o with all of the boozy baking going on around here! I mean, we’ve had boozy whoopie piesΒ and now I am bringing you a new cupcake with wine!

These cupcakes are different though…it is sparkling wine after all πŸ™‚

What You’ll Need:
Cupcakes
– 1 box of strawberry cake mix {don’t act surprised…the mix is where its at}
– 1/3 cup plain Greek or regular plain yogurt
– 1 1/3 cup prosecco
– 3 eggs
Icing
– 1 cup + 1 Tbsp Prosecco
– 2 sticks butter, softened
– 2 1/3 cup powdered sugar

Let’s Make It:
1) Preheat your oven according to the cake mix directions. Mine is 325 degrees because I use a non-stick pan. Line the cupcake pan with cupcake liners.

2) In a mixer, combine the cake mix, yogurt and eggs until well combined. With the mixer on low, slowly pour in prosecco. Mix on low until completely combined.

3) Fill cupcake cups about 2/3 full. Bake according to box directions {mine was 325 degrees for 15-18 minutes}. Remove from oven and cool completely.

4) Make your icing: In a small saucepan, heat 1 cup of prosecco over medium high heat. Simmer until reduced to 2 Tbsp. Remove from heat and cool completely.

5) With a mixer, beat butter until smooth. Add in powdered sugar, 1/2 cup at a time, blending until smooth. With the mixer running, add 2 Tbsp reduced prosecco + 1 Tbsp prosecco. Mix on low until fully incorporated.

6) Ice cupcakes and enjoy.
