Thai Sweet Potato Nachos

I think sweet potatoes are generally one of those love or hate items. Before I did Whole30 the first time, I never used to eat them. Of course, they are way better for you than regular potatoes so they went into meal rotation a lot once I started doing Whole30 or trying to stick to a paleo diet. Mathlete, the sweet potato lover, was thrilled! For our our Big Game party, we will be serving Thai sweet potato nachos in place of the regular potato version.

Thai sweet potato nachos are full of flavor and a great alternative to the traditional potato variety.

These nachos combine a ton of amazing flavors together and they all just work perfectly. Think of them like the perfectly prepared Super Bowl team you {hopefully} are watching on tv for the game. 

Ingredients for Thai Sweet Potato Nachos:

3 sweet potatoes, peeled and waffle cut {or sub frozen sweet potato fries}
1 Tbsp oil {skip for frozen fries}
1 cup shredded, cooked chicken
3/4 cup peanut sauce, divided
3 Tbsp Sriracha
1/2 cup diced pineapple
1/2 cup red onion, diced
1/3 cup cilantro, finely chopped
1/4 cup chopped peanuts

Let’s Make It:

1) Preheat oven to 425 degrees. Toss sweet potatoes in oil and place on rimmed baking sheet. Bake for 15-20 minutes or until crisp. {If using fries, cook according to directions.} Place on serving dish.

2) In a bowl, mix together chicken with 1/2 cup peanut sauce. Place on top of sweet potatoes.

3) Add remaining toppings in layers on top of the chicken. Serve immediately.

The great thing about these nachos, or any nachos, is that you can totally customize what you put on them. Mathlete likes more pineapple so I add a little extra. I have friends who aren’t fans of cilantro so will reduce it when they are coming over. Play around with the flavors and decide which mix works best for you. If you make them like this, just be prepared for a flavor explosion in your mouth. They are so delicious.
