What is On Your Menu?

June 26, 2013 By Shannah Leave a Comment

Ok, lovelies, help me out.  I want to know what is on YOUR menu this week.  Sure, I’m still sharing some great ideas down below but I’d love to hear what you have cookin!

Sunday:  Sundays are just the perfect days to have slow roasted meats, like this herb roasted pork loin, for dinner.

Monday:  Salads are always great during the summer because they give a meal a lighter feel.  I am loving the idea of a chicken rice salad.

Quicky Menu Planning {WTCW #103}

June 5, 2013 By Shannah Leave a Comment

What do you get when you combine one {already} busy mom with the last week of school?  NO time to do anything extra at all and some quicky menu planning!

Now, a smart mom/blogger would have planned this out weeks ago and written up the post, complete with fancy collages and descriptions, too.  BUT, I never claimed to be a smart mamma 😉  So, What to Cook Wednesday is lacking in the pretty collages and commentary this week.   I wouldn’t leave you  hungry though so read on for some great menu ideas.

May 29, 2013 By Shannah Leave a Comment

The weeks are just flying by it seems. Spending a bunch of time stuck on the couch certainly didn’t make time slow down at all.  Here we are again on Wednesday and I bet {if you are like me} you are searching for some menu planning help!  Well, that is what What to Cook Wednesday {WTCW} is all about so let’s get started.

Sunday:  I love mushrooms and portabellas are definitely high on my list of favorites.  Adding romesco, pesto and goat cheese just makes a delicious mushroom even tastier so I am in!

Menu Planning Help: WTCW #101

May 22, 2013 By Shannah 2 Comments

Busy moms and dads can use all the meal planning help they can find.  That is one of the reasons I started this whole What to Cook Wednesday series.  It allows me to find new recipes to feed my family AND provides some menu planning help to my readers. Win win in my mind!

So, since it is mid-week and what to cook is probably on your mind, let’s get started!

Sunday:  Let’s start off our week with a delicious meal of creamy polenta and chorizo. Throw in some roasted green beans and we have one delicious meal.

Monday:  Mondays are always busy as we get thrust back into the work/school week after the weekend.  Ginger, garlic and chili shrimp are perfect for these kinds of night because it cooks up so fast.

Weekly Menu Plan Ideas – WTCW #93

March 27, 2013 By Shannah Leave a Comment

What to Cook Wednesday (WTCW) is super fun for me!  It helps me come up with new weekly menu plan ideas while also sharing with you some awesome recipes from around the web!

Do you ever make any of the recipes I share?  Maybe you have some recipes of your own you’d like to share here…If you do, shoot me an email because I would LOVE to have you guest post for a WTCW segment to see what menu plan ideas you have.

Now, let’s get on with our recipes!

Sunday:  Corned beef did not make an appearance in our house for St. Patrick’s Day.  So, I’m going to make up for it and have baked honey mustard corned beef this week instead.

Monday:  Stir fry is such an awesome option for a quick weeknight meal.  I’ve got Asian stir fry with noodles on my list for the week because I know our Monday is going to be a busy one.

WTCW #87

February 13, 2013 By Shannah 1 Comment

Do you love food?  Do you share recipes on your blog frequently?  If you answered yes to one {or both} of those questions, then you are the PERFECT guest poster for a WTCW post!  Interested?  Send me an email and I will hook you up with all the details!

Now, let’s take a look at look at what’s for dinner next week.

Sunday:  Sundays are days made for cooking! Lounge around the house while a delicious meal, like lightened up Sheperd’s Pie, comes together for your enjoyment.

Monday:  I am really working on getting back into a meatless Monday routine.  I think squash and sweet potato chili is a good recipe to help with that goal.

Tuesday:  I think I am going to rename Tuesday to Crockpot Day.  I seem to use my crockpot the most that day anyways.  This week, I am eyeing slow cooker picadillo.

Wednesday:  I could eat goat cheese on just about anything.  Strangely though, I have never thought to put it on stuffed peppers…until now!  I am going to make stuffed peppers with goat cheese.

What to Cook Wednesdays – Potlucks

June 15, 2011 By Shannah Leave a Comment

6.15.11

We have our annual block party coming up this weekend (YAY!) and the invitation requests everyone bring a side dish to share.  So, in honor of this potluck style party, this edition of WTCW is focused on potluck side dishes for summer.
[Gina’s Skinny Taste], [My Recipes], [Epicurious], [Food Network]

The top of my list of ideas for the block party right now is BLT Macaroni Salad. I might consider changing up the pasta shape just because I have other shapes hanging around the house but the flavors sounds delicious!

If I have any leftover tomatoes, this Tomato Cucumber Salad also sounds like a crowd pleaser (especially for anyone watching their waistline for summer!).

Chickpeas are a great addition to most any dish and in this Chickpea Salad with Lemon Parmesan and Fresh Herbs they really are the stars of the dish.

My daughter, H, adores black beans so I might consider whipping up this Black Bean Salad in the future for one of our picnics.
[The Kitchn], [Buitoni], [All Recipes]

Since falling in love with Pho during the winter months, I’ve been more interested in exploring Vietnamese cooking. Goi Chay (Vietnamese Vegetable Salad) might be a good starting point for summer.

Of course, if you are like us, picnics and potlucks come up unexpectedly and we aren’t always prepared (I know…you can’t believe that I would be unprepared for something but trust me…it happens). A go to semi-homemade pasta salad recipe is a must.

Lastly, the quintessential Broccoli salad which combines one of the most hated vegetables for many people with bacon to make everything better!

Any potlucks, picnics or BBQs in your future? Do you have any go to recipes for events that are real crowd pleasers?
