Menu Planning Help – What to Cook Wednesday #102

The weeks are just flying by it seems. Spending a bunch of time stuck on the couch certainly didn’t make time slow down at all.  Here we are again on Wednesday and I bet {if you are like me} you are searching for some menu planning help!  Well, that is what What to Cook Wednesday {WTCW} is all about so let’s get started.

Sunday:  I love mushrooms and portabellas are definitely high on my list of favorites.  Adding romesco, pesto and goat cheese just makes a delicious mushroom even tastier so I am in!

Monday:  Lighter meals are a must now that the warmer weather is here.  I love the idea of making turkey taco lettuce wraps for a delicious, lighter meal.

Tuesday:  Meals using whatever I can scrounge up in my fridge sometimes turn out to favorites.  This is the whole idea behind cauliflower sausage casserole and I am hoping it tastes as good as it sounds.

Wedneday:  How do you make chicken delicious?  Well there are a million ways but this one includes stuffing it with roasted red peppers, mozarella and basil.

Thursday:  Pasta night is always a favorite in our house.  Adding blackened chicken to macaroni and cheese just makes pasta night extraspecial.

Friday:  Hot weather doesn’t mean you can still enjoy soup.  Just go for something a little lighter like yellow squash soup with cured strawberries.

Saturday:  Sometimes bite sized food can be used in place of large meals.  I love the idea of doing a bunch of little bites, including mini Jamaican beef bites in phyllo shells, for dinner instead of one big meal.
