The perfect summer cocktail is here! A Strawberry Aperol Spritz is light and refreshing with the perfect hint of strawberries for summer, just add ice!

I’m a huge fan of wine. But, during the summer, I usually choose a good cocktail over my standard glass of wine in the evening. A brunch event recently, I was introduced to an aperol spritz which is a compbination of aperol, sparkling wine and club soda. It was amazing and so perfect for me because I could still get my wine and have my cocktail! At home, I like to add a little extra something to mine and have a Strawberry Aperol Spritz.

The great thing about this Aperol cocktail is that it is really easy to customize to whatever fruit you have on hand. Aperol is a lot like Campari but is less bitter. It has flavors of bitter orange and rhubarb which makes it great for pairing with sparkling wine.

Refreshing Strawberry Aperol Spritz

Because Aperol has a pretty low alcohol content, this is a really light cocktail which makes it perfect for summer. I love the little extra sweetness that the strawberry syrup adds to the drink. You can store the syrup in a glass bottle in the refrigerator for a few weeks.

Strawberry Aperol Spritz

Ingredients

Strawberry Simple Syrup:

  • 1 lb Fresh Strawberries hulled
  • 1 cup Sugar
  • 2 cups Water

Cocktail - Per Drink:

  • 3 oz Prosecco or use other sparkling wine
  • 1 oz Strawberry Simple Syrup
  • 2 oz Aperol
  • splash Club Soda
  • Limes for Garnish

Instructions

  • For the simple syrup: Combine strawberries and water in a large pot. Bring to a boil over medium heat. Reduce heat and simmer for 20 minutes. Remove from heat and strain berries with mesh strainer. Discard berry solids. Add sugar to remaining liquid and return to boil over medium heat; stirring to dissolve sugar. Reduce heat and simmer for 7-10 minutes. Remove from heat and let cool completely.
  • For the cocktail: In a glass with ice, combine prosecco, strawberry simple syrup, Aperol and club soda. Stir gently. Serve with lime wedges.
