Pork and Mushroom Stroganoff

I am excited to be sharing a delicious recipe using Smithfield Marinated Pork. While I was compensated for this post through Sverve, as always, all opinions, recipes and ideas are my own.

A long day at the office can leave me feeling like the last thing I want to do is think about dinner. On those days, I need something that I can throw together fast and that still tastes really good. After all, if I am going to cook, I want something that is still delicious or I’ll be regretting not ordering take out. That is when I turn to items like marinated meats and other convenient foods. Recently, I used the Smithfield marinated pork loin to create a pork and mushroom stroganoff that was absolutely amazing.

When I first tried the Smithfield marinated pork products, I was so impressed with how flavorful and juicy the meat was that I decided to head back to the store for a different flavor. Right now, they are on sale for under $10 through 9/30 at Food Lion so it was a good time to stock up. This time, I went with the Portobello Mushroom Loin Filet.

What You’ll Need:

1 Smithfield Portobello Mushroom Loin Filet
2 cups sliced mushrooms
1 onion, diced
3 cloves garlic, diced
1 Tbsp oil
1/2 cup broth {I used beef}
1/2 cup sour cream
1/4 fresh parsley, chopped
2 cups cooked egg noodles

Let’s Make It:

1) Preheat oven to 400 degrees. Place pork in baking dish and bake in oven for 20 minutes. Remove from oven and let stand for 10 minutes before slicing.

2) Meanwhile, heat oil over medium heat in a pan. Add onion, garlic and mushrooms and saute for about 10 minutes. Add broth and simmer for 5 minutes. Remove from heat. Stir in sour cream and 1/2 of parsley. Serve over hot egg noodles and sliced pork.

    I wanted to make a pasta with my pork but couldn’t figure out the best kind to make! Stroganoff would have been AWESOME! Looks delicious!
