Pineapple Right Side Up Cake

Our neighbors all like to get together from time to time for casual dinners. They range from cooking out to pizza in the driveway. The only thing they have in common is that everyone contributes something.

Just like our monthly dinner club meetings, I like to make something fun for these meals.  I’m not really a baker so I tend to go for dips or main dishes.  I wanted to branch out though so I decided to give a cake a try.

 


I started off with my favorite boxed cake mix. What?  I said branch out not go crazy and make a cake from scratch.

I’m really trying to focus on healthier version for many of the items we make so I decided to use fruit in the cake versus the standard eggs and oil.

I had heard about some new frostings from Cool Whip so I decided to check them out. The #CoolWhipFrosting is found right there in the frozen section next to traditional Cool Whip. 

Pineapple Right Side Up Cake

What you’ll need:
Cake
– 1 box yellow cake mix
– 1 20oz crushed pineapple (do not drain)
Frosting
– 1 container vanilla #CoolWhipFrosting
– 1 8oz container of fat free cream cheese, softened
– 1 20oz crushed pineapple, drained
– 1/2 cup shredded coconut

Let’s Make It:
1)  Preheat oven to 350 degrees.  Coat two 8 inch cake pans with cooking spray.

2)  Mix cake mix and crushed pineapple with mixer.  Beat for about 2 minutes until thoroughly mixed. Pour into the prepared cake pans and bake according to box directions (mine was ~20 minutes).

3)  Once the cakes are cooked, cool completely.

4)  With the mixer, beat the #CoolWhipFrosting and cream cheese until smooth.  Fold in the crushed pineapple.  Taste the frosting {use a small spooon though because this stuff is so delicious you’ll want to the eat the whole bowl if not!}

5)  Place one cake on cake plate.  Cover the layer with 1/2 of the frosting.  Top with second cake layer and remaining frosting.

6)  In small pan, toast coconut.  Sprinkle over the top of the cake.

Mathlete couldn’t even wait until I was done taking pictures to eat it.  He said the frosting was especially delicious and asked if I had any extra that wasn’t on the cake!

    Pineapple coconut is my all time favorite flavor combo, especially in cakes. And I ALWAYS use boxed mixes, lol. Why stray from a perfect boxed cake mix.
