Key Lime Cookie Cups

Key Lime Cookie Cups takes key lime pie and gives it a little makeover! You get the best of both worlds with this cookie cups recipe! Pie and cookies combined?! What could be better! Everyone will love how great these Key Lime Cookie Cups recipe turn out!

If you follow me on Instagram, you’ve seen that we have a new addition to our household. She is adorable but is so much work. My poor husband is suffering because she has been up most nights whining and he has had flights he had to get up for the next morning.

I wanted to surprise him with something delicious to perk up his day.  His absolute favorite dessert is anything key lime. I am obsessed with little cookie cups so I combined them to create Key Lime Cookie Cups.

These Key Lime Cookie Cups are the perfect little bite sized dessert. I love making a bunch of them for parties because they offer just the right amount of sweetness and still allow you to try everything else on the dessert table. 

I use pre-made cookie dough for the cookie cups because, even after testing a few homemade recipes, I think it holds up the best when making the cookies into little cups. If you have a favorite homemade cookie recipe, definitely give it a try in this recipe to see how it works.

Key lime cookie cups recipe

Ingredients for Key Lime Cookie Cups:

1 roll sugar cookie dough
14 oz sweetened condensed milk
8 oz cream cheese, room temperature
1/2 cup key lime juice
3 tsp key lime zest {key limes are small and difficult to zest sometimes so feel free to substitute regular lime zest}

Let’s Make It:

Preheat oven to 325 degrees. 

Press about 1/2 Tbsp of cookie dough into each cup of a mini muffin pan. Press into the middle of the dough to create a cup. Bake in oven for 10-15 minutes or until cookies are done. Remove from oven and use the back of a spoon to press the cups into place. Cool completely.

Meanwhile, using a mixer with the whisk attachment, whisk together the sweetened condensed milk, cream cheese and lime juice. Stir in lime zest. Refrigerate for 15 minutes. 

Spoon filling mixture into each of the cooled cookie cups. Refrigerate for 2+ hours. Top with whipped cream and extra lime zest if desired.
