Herbed Steaks and Roasted Potatoes #STAROliveOil

 I love cooking and trying out new ingredients.  Flavored olive oils and olive oils crafted for specific types of food are one of my newest favorites to try out.  At a recent shopping trip to Walmart, I discovered that #STAROliveOil makes three different varieties of olive oil that are specially formulated for different foods by using different types of olives to create unique flavors that pair well with everything from vegetables to beef..  I used two of the flavors to make my delicious herbed steaks and roasted potatoes.#shop Finished dinner with label_wm

When I was shopping I saw the Star Arbequina {for vegetables} and the Picual {for Beef and Lamb} olive oils and knew they would be perfect to use in my dish.  I also looked at the Hojiblanca which is for poultry and pork dishes.  I’ll keep that one in my for next time 🙂  All of the flavors are made from cold pressed olives and are extra virgin olive oils so they are high quality.

What You’ll Need:
4 Tbsp chopped rosemary
4 Tbsp chopped thyme
2 Tbsp Star Picual Olive Oil, divided
2 steaks, your choice of cut
1 shallot, finely chopped
1/4 cup red wine
1/4 cup beef broth
4 Yukon gold potatoes
2 Tbsp Star Arbequina Olive Oil
2 tsp kosher salt
1 tsp ground black pepper

Let’s Make It:
1)  Mix the herbs together in a small bowl.  Place 1/4 of the herbs on the bottom of a piece of plastic wrap.  Rub steak with 1/2 Tbsp of Picual olive oil and place on top of  herbed plastic wrap.  Top with 1/4 of herb mixture.  Wrap plastic wrap tight around the steak.  Repeat for the second steak.

2)  Preheat oven to 400 degrees.  Line a baking sheet with nonstick foil.

3)  Cut potatoes into 1 inch cubes.  Toss with 2 Tbsp of Arbequina olive oil.  Spread onto prepared baking sheet and sprinkle with salt and pepper.  Roast in oven for 15 minutes or until fork tender.  Reduce oven temperature to 350 degrees.

4)  In a large pan, heat remaining 1 Tbsp of Picual olive oil over medium heat.  Add steaks and sear on both sides.  Transfer pan to the oven and cook for an additional 10 minutes or until desired doneness.  Remove from oven and set steaks aside.

5)  Place the pan over medium heat and add shallots.  Saute for 1-2 minutes.  Pour in red wine and beef broth scraping the bottom of the pan with the spoon to loosen the bits.  Simmer for 3-5 minutes.  Drizzle over finished steaks on the plate.#shop finished steak_wm#shop Finished meal with cut steak_wm#shop finished steak top view_wm

    1. Sorry that wasn’t really clear. I updated it. These olive oils use different types of olives so that, when pressed and the oil is created, the flavors works best with certain types of foods. For example, the olive oil for vegetables uses arbequina olives which has a slight almond flavor that enhances the natural flavors in most vegetables.

    Okay, I am officially hungry again. I love steak and potatoes and it is a dish that is really easy to prepare. One reason for my herb garden each year is that I can use the herbs to prep dishes with potatoes and add flavor without a lot of salt.

    I could barely read your post, because the pictures are so freaking amazing. I want to have dinner with you immediately. I love cooking with olive oil and this recipe is both imaginative and looks like it could be easily made with any meat, which is inspiring me to get busy in the kitchen. Now if I can just plate it like you!

  3. YUMMMM! I love using our garden Rosemary anywhere I can – and who doesn’t love steak? Well, everyone in my house loves it. Even my self proclaimed vegetarian. She’s a nut.
