Guest Blogger: Stuffed Strawberries

Confession: “I am a Pinterest Junkie” – yep – I love it! I love all the unique ideas in one place!I love to be able to pin the idea on my make believe board and not have to save the information to my computer or print it until I’m ready to. I love being able to access Pinterest on my phone while I’m at the grocery store so I can pick up the ingredients for a new recipe I want to try. I love knowing there are other people in the world just like me. Those “strange” crafters who are OCD in their organization. I know I have pinned more ideas than I can use in two lifetimes! However, the ideas are there at my fingertips when I am ready!

Today I am sharing one of my new favorite snacks and menu items for parties: stuffed strawberries.

Ingredients:
1 pound of fresh strawberries
4 ounces of fat free cream cheese
4 ounces of strawberry or vanilla greek yogurt
4 tablespoons of honey (or alternative no calorie sweetener)
1 teaspoon vanilla extract
Graham cracker crumbs (maybe 1/4 cup, it doesn’t take much)

Rinse the strawberries, hull the strawberries with a strawberry huller and clean out the inside with a paring knife. Set strawberries aside
Basic strawberry huller I found at Walmart for a couple dollars.

In a mixing bowl, combine cream cheese, greek yogurt (try different flavors; my favorite is blueberry), honey and vanilla extract.
Fill each strawberry with cream cheese filling using a piping bag (make a thrifty easy disposable piping bag with a ziploc bag with the corner cut off) or a decorating gun.
I love my Pampered Chef decorating set; so I just filled it up and shot the filling in.
After all the strawberries are filled, dip or sprinkle graham cracker crumbs over the strawberries. I laid the strawberries in rows on a serving platter. If you want them to stand upright, simply slice a bit off the bottom of the strawberries before filling.
*Tip; If you happen to have any of these scrumptious treats leftover they freeze wonderfully to use in smoothies!

For those who do not like cream cheese, personally I LOVE it, but the hubby doesn’t; I serve an alternative. Our favorite way to eat strawberries; dip them in sour cream and roll them in brown sugar.
