Orange Chicken Satay Ingredients

  • Jasmine Rice: Feel free to use precooked or boil in bag rice to speed things up.
  • Oranges: The zest and juice of the oranges are vital in this recipe as they help flavor the rice and the sauce in the stir fry.
  • Avocado Oil: Any neutral oil will work here.
  • Chicken Breast: Use boneless, skinless breast cut into strips or tenderloins that are halved.
  • Garlic
  • Stir Fry Vegetables: I use an onion, bell pepper, shredded carrots, and snow peas. You can substitute your favorites but make sure they are similar sizes and cooking times.

How to Make Orange Chicken Stir Fry

There are two parts to this recipe: the orange jasmine rice and the orange chicken satay. Start with cooking the rice and, while it simmers, you can prep the stir fry with just a few simple steps.

  • Velvetize the chicken. Velveting is a cooking technique that involves marinating the meal to tenderize it and a create a surface that absorbs sauces. For a lean meat like chicken breast, it also helps prevent it from drying out during cooking.
  • Cook the chicken in oil. Be sure to work in batches to avoid overcrowding the pan. This will help prevent the chicken from steaming.
  • Cook the vegetables. After the chicken is cooked and set aside, add the vegetables to the pan. Depending on which vegetables you are using, you may add some earlier than others based on their cooking times.
  • Make the sauce and add to the pan. In a bowl, combine the sauce ingredients and then add to the vegetables. Bring it to a simmer before adding the chicken and then allow everything to cook together for a few minutes.

Ingredients

Rice

  • 1 cup Jasmine rice rinsed
  • 2 Tablespoons orange zest

Chicken

  • 2 1/2 Tablespoons avocado oil
  • 1 1/2 pounds chicken breast cut into strips
  • 1 1/2 Tablespoons cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Stir Fry

  • 3 cloves garlic minced
  • 1 onion sliced
  • 1 bell pepper sliced
  • 2/3 cup shredded carrots
  • 1/2 cup snow peas trimmed

Stir Fry Sauce

  • 4 Tablespoons peanut butter
  • 4 Tablespoons soy sauce
  • 3 teaspoons ground fresh ginger
  • 1/4 teaspoon crushed red pepper
  • 1/2 cup orange juice
  • 1 teaspoon cornstarch

Instructions

Rice

  • Cook Jasmine rice according to package instructions. When finished, combine with orange zest in a bowl and set aside.

Stir Fry

  • In a bowl, combine 1/2 tablespoon oil, cornstarch, salt, pepper, and chicken breast. Stir to coat the chicken pieces.
    2 1/2 Tablespoons avocado oil, 1 1/2 pounds chicken breast, 1 1/2 Tablespoons cornstarch, 1 teaspoon salt, 1/2 teaspoon pepper
  • Heat avocado oil in a large pan over medium heat. Working in batches, if needed, add chicken breast and cook for 4-6 minutes on each side or until cooked through. Remove from pan and set aside.
  • Add onion, garlic, bell pepper, and carrots to pan. Cook for 5 minutes.

  • In a small bowl, combine peanut butter, soy sauce, ginger, crushed red pepper , and orange juice. Stir well to combine. Whisk in 1 teaspoon cornstarch. Add to pan and bring to a boil. Simmer for 3 minutes. Add snow peas and cook for an additional 2 minutes.
    1/2 cup snow peas, 4 Tablespoons peanut butter, 4 Tablespoons soy sauce, 3 teaspoons ground, 1/4 teaspoon crushed red pepper, 1/2 cup orange juice, 1 teaspoon cornstarch
  • Serve stir fry over orange Jasmine rice.
