Chicken Sandwiches with Balsamic Glaze

I’ve been spending more time in the kitchen (YAY!) thanks to some events {like our parents’ day out}.  One of my recent recipes was for chicken sandwiches with balsamic glaze.

 

What you’ll need:
– chicken breast (or shredded chicken)
– 1/2 cup balsamic vinegar
– 1 Tbsp brown sugar
– 1/2 Tbsp soy sauce
– 1/2 cup mayonnaise
– 3 Tbsp Dijon Mustard
– 1 tsp  minced garlic
– spreadable Brie cheese
– Ciabatta rolls
– lettuce
– tomato (sliced)

Let’s make it!
1)  Start by cooking your chicken breast (or if you are using rotisserie chicken, shred it.) and then shred it.  Remember you can shred it super easily by using your mixer!

2)  In a small saucepan, combine the balsamic vinegar, brown sugar and soy sauce.  Bring to a boil.  Lower heat and simmer until it was thick enough to cover the back of the spoon.

3)  In a small bowl, combine the mayonnaise, mustard and garlic.  Stir to combine well.

4) Spread the mayonnaise mixture on one side of the Ciabatta roll and the other side with Brie cheese.

5)  Top with chicken.

6)  Add lettuce and tomato.

7)  Then, drizzle with balsamic glaze.

Enjoy!  These sandwiches are so good and even hold up well when made before hand and taken to a picnic.  Or, take all the ingredients with you and let your guest customize their own sandwich!
