Pesto Chicken Salad

June 12, 2014 By Shannah Coe 4 Comments

One of the huge perks of working from home a few days a week {well, besides the easy commute} is the ability to have breakfast and lunch at home.  If you weren’t already sure, I love to cook and I get bored very easily with deli sandwiches and frozen meals I can pop in the office microwave. I don’t have a lot time to put together a fancy meal or anything but I can squeeze out a freshly made sandwich or breakfast muffin.  The other day, I was craving chicken salad and my  basil plant is growing on hyperdrive so I ended up making pesto chicken salad.  Now, this salad was amazingly delicious but unfortunately just doesn’t look nearly as good as it tastes so you have to trust me on this one.

TBT: Balsamic Chicken Sandwich

June 5, 2014 By Shannah Coe 1 Comment

Picnic season is in full force here because the weather is nice {not too hot yet} and it is such a great time to be outside. We are so lucky to have a bunch of different places to go for picnics around here and we really try to take advantage of them whenever we can.  Of course, sometimes we just like having sandwiches and other typical picnic fare at home for lunch too.  Last year, I shared one of my favorite sandwiches and I wanted to bring them back this year because they are just so delicious.  I actually  had one of this balsamic chicken sandwich for lunch today and I was reminded exactly how tasty they are!

St. Patrick’s Day Food: Reuben Sliders

March 12, 2014 By Shannah Coe Leave a Comment

Remember me telling you all about how much Mathlete loves a Reuben sandwich and my solution was to make him Reuben Dip?  Well, someone wasn’t entirely happy with just having a dip made with the flavors of his favorite sandwich.  Of course, the easiest thing to do would be to just make him a Reuben…or even take him somewhere to buy one.  Instead, I decided to make Reuben sliders.

Guest Blogger: Crock Pot French Dip Sandwiches

December 12, 2013 By Shannah Coe 3 Comments

Hi! I’m Danita and I very excited to be guest posting for Shannah here at “Just Us Four.”  I have a passion for all things food. I love planning it, preparing it, sharing it and of course eating it! At O Taste and See I blog about my family’s favorite recipes and often the stories behind them.  My husband says it’s about, “Real Food for Real People”, that means, simple, easy, delicious dishes, made from ordinary ingredients.  If your reading about it, we’ve probably recently eaten it.

Comfort Food Made Easy: Grilled Ham and Cheese

July 3, 2013 By Shannah 9 Comments

I’m a Southern girl by birth.  Comfort food for me is fried chicken, mashed potatoes and chocolate cake.  All that stuff takes forever {and a lot of work} to make the “right” way.  While I was away in Utah, we visited a place called Melt Away and the delicious grilled cheese there definitely helped erase my home sickness/missing my family.

Comfort food in a sandwich is a novel idea for me but I decided to try and recreate recipe so I had an easy go to at home.

Easy and Healthy Lunch Recipes

July 3, 2013 By Shannah 9 Comments

I always struggle with lunch.  It is the meal of the day that gives me the hardest time when I am trying to eat healthier {which, honestly, needs to be more often}.  I work full time so whatever I have for lunch needs to be easily transported to work and be microwave friendly.  Easy AND healthy lunch recipes, besides a traditional salad, that fits into the work friendly category can be difficult to come by.

After a recent trip to the doctor to follow-up on my surgery, we stopped at Harris Teeter and I grabbed a few magazines to keep me entertained during recovery.  The cover of the July issue of All You grabbed my attention because it advertised 31 family meals and ways to kick start your metabolism {something I desperately need}.  I love finding new recipes for family meals because I can usually turn the leftovers into lunch ideas.

As I was flipping through the issue of All You, I found an entire article on healthy eating that included some great ideas for lunch.

Sandwiches are a great option for lunch but can often be high in calories and fat.  The magazine had a great recipe for a tuna salad that wasn’t full of mayonnaise and other high fat ingredients.  What I loved is that it is easy to customize too.

Kalbi Flank Steak Sandwiches

September 12, 2012 By Shannah 4 Comments

We recently went on a little wine tour with a bunch of our freighbors.  Part of the day included a potluck style picnic and Mathlete and I signed up to bring sandwiches.Of course, I didn’t want to go straight turkey or ham for my sandwiches.  I wanted something fun and different.
