A Fall Dinner from World Market: Pumpkin Macaroni and Cheese

One of my favorite places to shop when I am out running errands and have a little bit of extra time is World Market.  It is also my go to place for new table linens and other decorative items.Mathlete recently got offered a new job and I wanted to make him a special dinner to celebrate.  I know he loves macaroni and cheese so I figured that would be the perfect thing.  I stopped in at World Market to check out some of their bakers to cook my macaroni and cheese in.

They had some great options but this green beauty caught my eye immediately.  I grabbed it, along with two matching ramekins and decided to look around the store some more.


Right around the corner from the bakers, I found the perfect thing for my dinner

I flipped through it and found a recipe for a classic Macaroni and Cheese that called my name.  I decided to put a little fall spin on it and add some pumpkin and sage to it.
So, off I went through to store to find the ingredients I needed that World Market carries.  Of course, I checked out some eye candy while I was there too.

I gathered my stuff and headed for check out.

At home, I started my pasta and then got working on my sauce.

Once my roux (butter + flour) was ready, I added in the rest of my ingredients to make a nice, creamy pumpkin sauce.

I had picked up some cheese flatbread that I crushed to make a topping for my macaroni and cheese.

I mixed the pasta with my pumpkin sauce and poured it into my baker.  I topped it with a bit more cheese and my crushed flatbread before putting it into the oven to finish.   It smelled so delicious when it was baking.

While it baked, I set two new place settings at the table to make the meal feel a little a little more special than our regular dinners.

Then, my macaroni and cheese was all done and ready to eat. Yum!

Want to recreate my pumpkin macaroni and cheese?  It’s easy!

Here’s what you’ll need:
– Bag of penne pasta
– 1/4 cup butter
– 1/4 cup flour {all purpose}
– 2 cups milk
– salt and pepper (1/4 tsp each)
– 1 cup pumpkin puree
– 2 Tbsp ground sage
– 1 tsp dijon mustard
– 2 cups shredded cheddar cheese
– 5 cheese flatbread crackers, crushed into large crumbs

Let’s Make It:
1) Cook pasta in boiling water for 5 minutes.  Drain and set aside.
2) In heavy sauce pan, melt butter. Stir in flour with a whisk and cook for 1 minute.
3) Stir in milk and bring to simmer.  Whisk for 1-2 minutes at a simmer until thickened.
4) Add salt, pepper, mustard, sage and pumpkin puree.  Stir well until combined.
5) Remove from heat and add 1 1/2 cups shredded cheese. Stir until cheese is melted.
6) Stir pasta in pumpkin sauce.  Pour into baking dish and top with remaining cheese and flatbread crumbs.
7) Bake at 350 degrees for 20 minutes.
