Tilapia with Pomegranate Avocado Salsa

Weeknight dinners are always tough at our house. With our schedule, we sometimes struggle to get everyone to the dinner table at one time but it is always a major goal. One this that makes it is easier is finding quick and easy recipes, like this tilapia with pomegranate avocado salsa, to make for dinner because it can easily be ready in just a few minutes and doesn’t require much hands on cooking time.

One thing that makes this recipe so easy to make is Gorton’s Signature Grilled Tilapia. The fish is already seasoned and ready to cook so, while it cooks, I can toss the ingredients for the pomegranate salsa together. Gorton’s has been around for 167 years (!) so you know, when you look for that familiar yellow-slicker wearing fisherman on the box, you are getting a quality product that has stood the test of time. Using Gorton’s products, like Grilled Tilapia or Salmon or shrimp selections makes it easy to enjoy a seafood dinner on any night of the week!

Ingredients for Tilapia with Pomegranate Avocado Salsa: 

4 Gorton’s Signature Grilled Tilapia filets
2 Tbsp crumbled goat cheese
Pomegranate Avocado Salsa: 
1 cup pomegranate arils
1 Tbsp fresh mint, chopped
1 Tbsp fresh parsley, chopped
1 tsp orange zest
3 tsp orange juice
1 jalapeno, seeded and finely chopped
1 shallot, finely chopped
1/2 tsp salt
1/2 avocado, diced

Let’s Make It:

1. Prepare Gorton’s Tilapia filets according to package instructions.

2. Meanwhile, in a medium bowl, toss together pomegranate arils, mint, parsley, orange zest, orange juice, jalapeno, shallot, salt and avocado. Refrigerate until ready to use. 

3. Once tilapia is cooked, transfer to plates and top with pomegranate avocado salsa. Sprinkle with crumbled goat cheese.

I love the subtle spiciness the jalapeno adds. If you want it less spicy, you can reduce the amount you use or leave it out all together.

This dish is ready in just 20 minutes from start to finish. Toss together a salad after you mix together the salsa and you have a complete meal ready to go. While you are out shopping for ingredients, just be sure to look for everyone’s favorite trustworthy, yellow-slicker-donning fisherman to ensure you are getting Gorton’s tilapia filets.
