Tilapia with Pomegranate Avocado Salsa

Ingredients

  • 4 Gorton's Signature Grilled Tilapia filets
  • 2 Tbsp crumbled goat cheese

Pomegranate Avocado Salsa

  • 1 cup pomegranate arils
  • 1 Tbsp fresh mint chopped
  • 1 Tbsp fresh parsley chopped
  • 1 tsp orange zest
  • 3 tsp orange juice
  • 1 jalapeno seeded and finely chopped
  • 1 shallot finely chopped
  • 1/2 tsp salt
  • 1/2 avocado diced

Instructions

  1. 1. Prepare Gorton's Tilapia filets according to package instructions.
  2. 2. Meanwhile, in a medium bowl, toss together pomegranate arils, mint, parsley, orange zest, orange juice, jalapeno, shallot, salt and avocado. Refrigerate until ready to use. 
  3. 3. Once tilapia is cooked, transfer to plates and top with pomegranate avocado salsa. Sprinkle with crumbled goat cheese.
