TBT: Strawberry Prosecco Cake Pops

Howdy from California wine country! We’ve spent the last few days working out way through parts of Napa and Sonoma on our way to Sacramento for the International Food Blogger’s Conference. We’ve been treated to so many delicious wines and amazing food. I know the conference holds even more for me too. For now, let’s time travel back to when I shared these delicious strawberry prosecco cake pops.

Strawberry Prosecco Cake Pops


These cake pops are such a fun way to incorporate sparkling wine into baking. I think they are perfect for bridal shower, girl’s night out or just a fun summer party. I keep them nice and easy by starting with a boxed mix because, while homemade cake is amazing, sometimes a little convenience is great too.

Ingredients for Strawberry Prosecco Cake Pops:

1 box strawberry cake mix
1/3 cup  regular plain yogurt
1 1/3 cup prosecco
3 eggs
1 cup prosecco buttercream frosting
Lollipop sticks
1 cup white chocolate chips

Let’s Make It:

1. Preheat oven according to box directions. Prep a 9×13 baking pan according to package directions.

2. Mix cake mix, yogurt and eggs at medium speed until fully combined. Slowly pour in prosecco with mixer on low.

3. Pour cake mix into prepared cake pan and bake according to box directions. Remove from oven and leave overnight.

4. Crumble cake into crumbs {you can use your processor if you want…I used a 5 year old who wanted to play with the cake}. Add in 1 cup of  prosecco buttercream frosting and mix well. Refrigerate for at least 30 minutes.

5. Roll 2 Tbsp of cake and frosting mixture into balls and place on nonstick surface. Stick lollipop stick in the top of each ball.

6. Melt white chocolate chips for 30 seconds in the microwave. Stir well. Continue to microwave in 10 second increments, stirring in between, until chocolate is melted and smooth.

7. Dip cake balls into melted candy and place back on nonstick surface until hardened.

We added sprinkles to a few of ours for fun. You can also change up the outside coloring by using Wilton candy melts or adding food coloring to the melted white chocolate.
