Roasted Garlic Stuffed Mushrooms

Every hostess needs a few simple but delicious appetizer recipes in your cookbook. These roasted garlic stuffed mushrooms are perfect for any occasion; from a dinner party to book club to a backyard feast with friends. I am sure you probably paused for a moment when I mentioned the words roasted garlic and entertaining in the same breath. I know…garlic has a strong smell. So do pets but we still love them right?!

I have the perfect solution to erase the garlic, pet or any other strong smell from your home in one simple product: Febreze ONE. Ingredients
Roasted Garlic
  • 1 head of garlic
  • 2 Tbsp olive oil
  • 1/2 tsp sea salt
Mushrooms
  • 8 large mushroom caps
  • 4 Tbsp mayonnaise
  • 3 Tbsp shredded white cheddar
  • 3 Tbsp shredded Parmesan
  • 2 Tbsp chopped parsley
Instructions
  1. 1. Preheat oven to 325 degrees. Cut top of garlic head off. Place garlic on piece of aluminum foil. Drizzle with olive oil and sprinkle with sea salt. Wrap foil tightly around garlic and place into oven. Bake for 30-40 minutes or until softened. Squeeze roasted cloves out of head of garlic.
  2. 2. In a medium bowl, combine roasted garlic cloves, mayonnaise, white cheddar, Parmesan and parsley. Stir to mix well. Season with salt and pepper.
  3. 3. Carefully remove stems from mushroom caps. Spoon cheese mixture into each cap. Place on baking sheet.
  4. 4. Increase oven heat to 375 degrees. Bake mushrooms for 15-20 minutes or until cheese is melted and bubbly.
Recipe Notes

These can be stuffed in advance and refrigerated until ready to bake.
