Pressure Cooker Korean Beef Sliders

Right now, it seems like it is all sports all the time at our house. We are inching closer to the BIG game and our annual get together to watch (full disclosure: While I love football, I’m in it for the food and commercials). This year, I am thinking small to win big by serving Pressure Cooker Korean Beef Sliders for everyone to enjoy (Tip: you may call your pressure cooker an Instant Pot).

The key to a delicious slider starts, of course, with the slider bun. My favorite for these Instant pot Korean beef sliders are Pepperidge Farm Slider Buns. They come in a variety of flavors including White, Sesame, Potato, Sweet & Soft and Wheat making them the perfect choice for just about any recipe. Pressure Cooker Korean Beef Sliders:

12 Pepperidge Farm Slider Buns
Beef:

3 lb beef bottom roast
1/4 cup brown sugar
1/4 cup hoisin
2 Tbsp Korean chili paste
1 1/4 cup beef broth
BBQ Sauce:
2 Tbsp Korean chili paste
1/3 cup ketchup
1/4 cup rice vinegar
2 Tbsp brown sugar
2 Tbsp soy sauce
4 Tbsp honey
4 garlic cloves, minced
Vegetables:
2 carrots, sliced
1 English cucumber, sliced
1/2 red onion, sliced
1/4 cup rice vinegar
Salt and pepper

Let’s Make It:

1. In a small bowl, mix together 1/4 cup brown sugar, 1/4 cup hoisin and 2 Tbsp Korean chili paste. Spread all over beef roast. Place roast into pressure cooker. Pour in 1 1/4 cup beef broth. Close lid and cook on high pressure for 15 minutes. Let pressure naturally release for 10 minutes and then, being careful to avoid the steam, manually release the pressure. Shred beef. 

2. In a saucepan, whisk together 2 Tbsp Korean chili paste, 1/3 cup ketchup, 1/4 cup rice vinegar, 2 Tbsp brown sugar, 2 Tbsp soy sauce, 4 Tbsp honey and 4 minced garlic cloves. Bring to a boil and then reduce heat to low. Simmer, whisking occasionally, for 10 minutes. Remove from heat and add 1/2 to shredded beef. Stir to combine.

3. In a medium bowl, combine carrots, cucumber, onion and 1/4 cup rice vinegar. Season with salt and pepper. Refrigerate for at least 15 minutes.

4. Spread remaining sauce on each of 12 Pepperidge Farm Slider Buns. Top with shredded beef and vegetables. Serve immediately.

I ate one of these when I first put them together and then another one once I was all done with the photographs. They definitely hold up well sitting out on the platter so they are perfect for your BIG game party.

Ingredients
  • 12 Pepperidge Farm Slider Buns
Beef
