Peanut Butter Cookie Eggs

Every Thursday, I treat my daughter to pizza from her favorite place on our way to gymnastics.  Wegman’s pizza is a lot like New York style and she just loves it.  She also usually asks for some kind of dessert in the form of a donut or cookie.  This is how I discovered their peanut butter patties.  I grabbed one and threw it on our bag one time to enjoy as my own dessert.  Little did I know what I was getting or how delicious it would be!  It is an amazing combination of cookie, peanut butter and chocolate.  After having that first one, I knew I would have to figure out how to make my own and decided to make peanut butter cookie eggs for Easter.

Peanut Butter Chocolate Chip Cookie Eggs #recipes #Easter #desserts #cookiesThese start out with a basic cookie dough.  My neighbor introduced to me to an amazing one from Martha Stewart and I made a few tweaks to it before baking.

What You’ll Need:
3 1/2 cups flour
1 1/4 tsp baking soda
1 1/4 tsp baking powder
1 1/2 tsp salt
1 1/4 cup butter, room temperature
1 1/2 cups packed brown sugar
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 1/4 cup semisweet chocolate chips
8 oz dark chocolate, chopped
1/2 cup peanut butter
1 cup dark chocoalate chips
1/4 cup white chocolate chips

Let’s Make It:
1)  In a bowl, combine flour, baking soda, baking powder and salt.

2)  In a large mixing bowl, beat butter and sugars until fluffy.  Reduce the mixer speed and add in eggs, one at the time.  Beat in vanilla.  Slowly add in flour mixture and mix until just incorporated.  Stir in semisweet chocolate chips and chopped dark chocolate.

3)  Line a 9×9 square pan with parchment paper or nonstick foil. Spoon dough into pan and spread evenly.  {If you don’t want the egg shape, you can spoon these out like regular cookies and then reduce the baking time to about 15 minutes.} Refrigerate for about an hour.

4)  Preheat oven to 350 degrees.  Bake cookie dough for about 30 minutes or until set.  Remove from oven and let cool.

5)  Using an egg shaped cookie cutter, cut out eggs from dough and place on parchment paper {I am a big fan of these precut sheets}.  Reserve remaining cookie pieces for another use.

6)  Spread the top of each cookie egg with a thick layer of peanut butter.  Melt remaining dark chocolate in microwave.  Stir until smooth.  Spoon dark chocolate over top of eggs until they are covered.  Let sit for about 10 minutes or until chocolate is set.
Melt white chocolate chips.  Drizzle white chocolate over top of eggs. Let stand for 5 minutes.
