Garlic Butter Chicken Meatballs

Garlic butter chicken meatballs are a delicious combination of flavors that go perfect with everything from pasta to zucchini noodles to being put onto slider rolls. No matter how you serve them, prepare for everyone to beg for seconds.

Each weekend, our family does meal prep to keep us ready for meals all throughout the week. One of my favorite things to put on the meal prep list are these garlic butter chicken meatballs. They are packed with flavor and can be used in so many different ways from lunch to dinner.

During the summer, my time in the kitchen is extremely limited. I try to make the most of the time I have by being extremely efficient with meal prep and the cooking process in general each night. Of course, great tools make the entire process from start to finish so much easier.

I made these garlic butter chicken meatballs and then, in the same skillet, tossed some zucchini noodles in the remaining sauce for a meal that was done in under 30 minutes and only used one pan. It is the perfect weeknight dinner! (My kids love pasta so, of course, I had a pot ready to make their pasta in place of zucchini noodles)

Garlic Butter Chicken Meatballs

  • Ground Chicken – A mix of light and dark meat works best to keep the meatballs from drying out.
  • Ground Pork
  • Gruyere
  • Garlic Paste
  • Fresh Herbs – A mixture of fresh oregano and parsley are used in these meatballs.
  • Panko Crumbs
  • Salt and Pepper
  • Butter

You can easily make these meatballs in advance and then freeze the uncooked meatballs. Or, cook them on Sunday and use them in a variety of ways throughout the week.

Ingredients

  • 3/4 pound ground chicken
  • 1/4 pound ground pork
  • 1/2 cup shredded gruyere
  • 3 Tablespoons garlic paste divided
  • 2 Tablespoons chopped fresh oregano
  • 2 Tablespoons chopped fresh parsley
  • 2 Tablespoons panko crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 5 Tablespoons butter

Instructions

  • Mix together ground chicken, ground pork, shredded cheese, 2 Tbsp garlic paste, oregano, parsley, panko crumbs, salt and pepper in a large bowl. Mix until fully combined. Form into approximately 12 meatballs.
    3/4 pound ground chicken, 1/4 pound ground pork, 1/2 cup shredded gruyere, 3 Tablespoons garlic paste, 2 Tablespoons chopped fresh oregano, 2 Tablespoons chopped fresh parsley, 2 Tablespoons panko crumbs, 1/2 teaspoon salt, 1/4 teaspoon pepper
  • In a large skillet, melt 4 Tbsp butter. Add meatballs and cook, turning to brown all sides, for 8-10 minutes. Baste the meatballs with the butter as they cook. Remove from skillet.
    5 Tablespoons butter
  • Melt remaining 1 Tbsp butter into skillet. Stir in 1 Tbsp garlic paste and cook for 1 minute or until fragrant. Remove from heat and spoon sauce over meatballs.
