Easy Greek Rice Salad

I have never really been a sandwich person so lunches for me are a bit harder. I love salads but get bored easily with the traditional lettuce variety. Recently, I have fallen in love with making rice based salads and my new favorite is an easy Greek rice salad that is packed full of flavor but takes minutes to put together.

My Greek rice salad uses single serving cups of Minute® Ready to Serve Rice that are ready in just 60 seconds. No other cooking required. Paired with the quick cooking rice is the delicious lemon pepper version of the Chicken of the Sea Pink Salmon Pouches. Both are so easy to transport to the office for lunch and take almost no time to finish.

I usually put all my ingredients, except for the rice, into my favorite bento lunch box and then mix it all together after I heat the rice.

Easy Greek Rice Bowl

Ingredients for Easy Greek Rice Salad:

1 Minute® Ready to Serve Rice – white rice
1 pouch Chicken of the Sea lemon pepper salmon
1/4 cup diced cucumber
1/4 cup sliced grape tomatoes
1/4 cup sliced olives
2 Tbsp crumbled feta cheese
1 Tbsp fresh mint, chopped
Juice of one lemon

Let’s Make It:

1. Heat rice according to package directions. Add to bowl.

2. Stir in salmon, cucumber, tomatoes and olives. Squeeze lemon juice over top of the rice mixture and toss to combine. Top with crumbled feta cheese and chopped mint.

This Greek rice salad is going to become your new favorite lunch. I love how easy is to make and how quickly I can put it together.
