Carrot Hummus Toast

Back when I did Whole30, I started eating a version of avocado toast almost every day for breakfast. Bacon replaced the bread and I was in heaven. After Whole30, I would have bread on some days or my regular paleo version on others. Then came the day that my grocery store was completely sold out of ripe avocados and I had to find something else to eat. I was still craving toast and so I decided to make carrot hummus toast to change things up a bit.

Carrot Hummus Toast

This delicious toast was inspired by the version I had an event that was catered by Le Pain Quotidien. It combines a hearty whole grain bread with hummus, carrots, cucumbers and walnuts. I sprinkle mine with a little sumac for extra flavor.

Carrot Hummus Toast Ingredients:

2 slices whole grain bread {look for lots of seeds!}
3 Tbsp hummus {I use roasted garlic hummus}
1 carrot, peeled
1 small cucumber, sliced
2 Tbsp chopped walnuts
2 tsp sumac

Let’s Make It:

Lightly toast bread. Spread one side of each bread slice with hummus.

Using a Y peeler or spiralizer, create thin strips of carrot. Top hummus with carrot pieces, cucumber slices and walnuts. Sprinkle with sumac. 

I make this for a quick snack or lunch all the time now. I keep all the supplies in our work fridge so that, on the days I forget my lunch or get too busy to eat it, I know I can quickly throw this together.

You could also use this for parties as an awesome appetizer option! It is great for vegetarians who may usually have to hunt for things to enjoy at parties since a lot of appetizers tend to be meat heavy…or, in the case of our parties, have bacon in them!

Toaster // Food Processor // Y Peeler or Spiralizer // Sumac

Ingredients
