Blueberry Lemon Poke Cake {Guest Post}

Here’s a variation of one  of my all time favorite cakes… the poke cake.
It’s moist, it’s  fruity, it is versatile. You can use different flavors of jello or  food coloring to fit any occasion. Here’s how I made this one,  combining two Summer favorites: Blueberries and Lemonade.

Blueberry Lemonade Poke Cake from All Things with Purpose for Just Us Four

Ingredients

1 Box yellow or white cake mix
1 Box blueberry jello
3 Eggs
1/3 Cup Oil
2 Cups Water
1 Container of Cool Whip
1 Cup Lemonade
Lemon juice (optional)
Blueberries

Instructions

Prepare cake mix according to box instructions *but instead of using water, use lemonade. I added a Tablespoon of lemon juice as well for extra lemon taste. Bake at designated temperature and until cooked through. Allow to set for 5 minutes. Take a tooth pick and poke {Lots} of tiny holes all over the top of the cake.

Bring 1 cup of water to a boil and add the jello mix. Stir thoroughly then add 1 cup cold water.

Pour jello all over the top of the cake, making sure you evenly disperse it across the top.

Cover and cool in the refrigerator for at least 2 hours. Top with cool whip and blueberries. Enjoy!
