Make your St. Patrick’s Day a little more delicious with these easy Reuben Sliders! These corned beef sliders are perfect for a crowd or just a few people. Definitely a must with green beer!

In honor of St. Patrick’s Day tomorrow, today’s post is all about corned beef sliders. I first made these sliders for Mathlete a few years ago since I know he really loves a Reuben sandwich.

I’ll be honest and tell you that I am not a huge Reuben fan so I had to do a little research when I decided to make it at home. Of course, you have to have tons of Thousand Island dressing, sauerkraut, and melted cheese. But, typically, in restaurants, you will find Reuben sandwiches on rye bread.

Since these were sliders, I couldn’t find any rye bread so I had to improvise. I also had Mathlete weigh in on whether he preferred corned beef or pastrami. When you make them, feel free to choose your favorite meat! 

Ingredients for Reuben Sliders

  • Slider Buns: I prefer the brioche style buns but you could choose your favorite. A pretzel bun would be great here too.
  • Corned Beef: Get this from the deli very thinly sliced or shaved. There is a lot of opinions about corned beef versus pastrami in a Reuben so, if you are team pastrami, you can use that here instead.
  • Dressing: I used Thousand Island in this recipe but Russian dressing would be good too.
  • Swiss Cheese
  • Sauerkraut: This is optional depending on whether you like it.
  • Butter

Easy Reuben Sliders

This reuben sliders recipe are absolutely perfect for a St. Patrick’s Day party or just as an easy, fun dinner option. We make these, along with Reuben pizzas, all the time and everyone who tries them loves them! For the kids, I will often just leave off the sauerkraut (although my 6 year old likes it) and they devour the corned beef sliders too. Definitely a great option for the whole family.

Reuben sliders, also called corned beef sliders, are a great St. Patrick's Day mini sandwich fit for feeding a crowd.

Ingredients

  • 1 pack Slider Buns
  • 3/4 pound Corned Beef shaved or thinly sliced
  • 1/2 cup Thousand Island Dressing
  • 8 slices Swiss Cheese
  • 1/2 cup Sauerkraut
  • 2 Tablespoons Melted Butter

Instructions

  • Preheat oven to 350 degrees. Line a baking sheet with foil.
  • Spread half of Thousand Island dressing on bottom of slider buns. Place on prepared baking sheet. 
    1 pack Slider Buns, 1/2 cup Thousand Island Dressing
  • Top each with a 1/2 a slice of Swiss cheese, corned beef, sauerkraut, and the other 1/2 slice of Swiss cheese. Spread remaining Thousand Island dressing on the other part of the slider buns. Place on top of sandwich.
    3/4 pound Corned Beef, 8 slices Swiss Cheese, 1/2 cup Sauerkraut
  • Pour melted butter over sliders. Cover with foil. Bake for 15-20 minutes in preheated oven. 
    2 Tablespoons Melted Butter

Notes

  • You can substitute pastrami for the corned beef.
  • You can substitute Russian dressing in place of the Thousand Island dressing.
