Weeknight Meals: Lemon Paprika Chicken

Weeknight meals can sometimes be the most difficult to come up with. We tend to make the same things over and over again and then get bored with them. To keep from hearing “spaghetti, again?” too often, I try to change things up while still keeping our weeknight meals easy to make. One of my newest favorites is lemon paprika chicken.
This chicken is awesome because it cooks in one skillet. While the chicken finishes cooking in the oven, I cook some of my kid’s favorite Kraft Macaroni & Cheese and add a vegetable. In under 30 minutes, we have a complete meal ready to eat. Plus, it is one that I know our whole family will enjoy.
Kraft Macaroni & Cheese announced last April that it would be removing all artificial flavors, preservatives and dyes, and in December 2015 it did just that. However, no one in my family noticed at all because it tastes just as delicious as it always has. Kraft Mac & Cheese has been a staple on American tables since 1937, and itโs been a big part of my family dinners since I was a young child. Itโs a brand that I grew up with, and something I can always count on my family loving. It makes getting a balanced meal for my family done easily.
Lemon Paprika Chicken Ingredients:
4 boneless, skinless chicken breast
1/2 Tbsp smoked paprika
1/2 Tbsp sweet paprika
1 tsp salt
1/2 tsp pepper
1 Tbsp oil
1/4 cup water or chicken broth
1 onion, sliced
1 lemon, sliced
1 cup grape tomatoes, halved
Let’s Make It:
Preheat oven to 375 degrees.
In a small bowl, combine smoked paprika, sweet paprika, salt and pepper. Stir to combine. Rub onto boneless chicken breasts.
Heat oil over medium heat in a large, oven safe skillet. Add chicken breast and cook for 3-5 minutes on each side. Add water, lemon slices and onion and transfer to oven. Cook for 15 minutes. Add tomatoes and cook for an additional 5 minutes.
I served the chicken with roasted broccoli and Kraft Macaroni & Cheese. Everyone loved the chicken but you can tell what they started eating first on their plates.
