Shanghai Meatball Stir Fry

Every year, I vow to plan out my meals and chop my veggies on Sunday so I am ready for the week. Some weeks that actually happens. Other weeks…not so much. I love making Shanghai meatball stir fry but don’t always have the time to prep all the ingredients from scratch. Thankfully, I discovered Eat Smart Salad and Stir Fry kits which come in handy for days like that.

Shanghai Meatball Stir Fry with Quinoa

Eat Smart Salad and Stir Fry kits are packed with five to seven delicious and beneficial superfoods. They are a fast and flavorful way to make sure you get plenty of vegetables in your diet. Plus, they have delicious things like kale, Brussels sprouts and and even roasted pumpkin seeds in them. My absolute favorite is the Shanghai blend.

I use it in my Shanghai meatball stir fry all the time and it saves me so much time because I don’t have to chop up my vegetables.

What You’ll Need:

1 Tbsp oil
1 bag Eat Smart Shanghai blend stir fry kit
1/4 cup chopped water chestnuts
1 cup cooked quinoa
8 chicken meatballs

Let’s Make It:

1) In a large skillet, heat oil over medium heat. Add vegetables from stir fry kit along with water chestnuts and saute for 2-3 minutes.

2) Stir in meatballs and heat for an additional 3-4 minutes. Add quinoa and sauce packet from stir fry kit. Stir and heat for 1-2 minutes or until heated through. 

I love a simple meal that is super delicious and this stir fry is totally it!
