Roasted Tomato Goat Cheese Pesto Pizza

I love goat cheese. You may remember a little strawberry goat cheese creation I shared recently and I have to tell you that appears on our table weekly now that strawberries are in abundance at the farmer’s market. Know what else goes amazing with goat cheese? Roasted tomatoes…especially when you use it to create a roasted tomato goat cheese pesto pizza. 

Roasted Tomato Goat Cheese Pesto Pizza

This is really like a french bread pizza since I used French bread as the base. You could easily cut this into pieces and turn it into the best appetizer or snack ever! Seriously, put it out and watch people trip all over themselves to get to it. It is THAT good.

Ingredients for Roasted Tomato Goat Cheese Pesto Pizza

1 loaf French bread {not baguette}
1 pint grape or cherry tomatoes
1 Tbsp olive oil
1/3 cup basil walnut pesto
2 oz Joan of Arc goat cheese
2 tbsp balsamic glaze

Let’s Make It:

1) Preheat oven to 400 degrees. Cover rimmed baking sheet with foil. Set aside.

2) In a bowl, stir together tomatoes and olive oil. Add to baking sheet. Roast in the oven, shaking pan occasionally, for 15-20 minutes or until tomatoes are blistered. Remove from oven.

3) Slice French bread in half lengthwise. Spread pesto onto bread. Top with tomatoes. Crumble goat cheese on top of the tomatoes and drizzle with balsamic glaze.

I had leftover goat cheese so I finished it off by just spreading it onto a French baguette I had around the house. In my world, goat cheese is perfect alone or in a delicious pizza!
