Pineapple “Butter” Cake – Making Substitutions

Father’s Day is this weekend…yes, I know, it came up crazy fast!  I started prepping for Father’s Day last month so the holiday wouldn’t sneak up on me like it has in the past.   Plus, I wasn’t sure when exactly my knee surgery would be so I wanted to ensure Mathlete got a proper celebration.
I love to cook and, well, Mathlete loves to eat so I wanted make him a delicious meal that I knew he would enjoy and that featured one of his favorite things: pineapple.  His love for pineapple runs  so deep that he will actually order the fruit cups for the kids at restaurants just so he can eat their pineapple.  He is in trouble if they ever develop a love for it!

We started with pineapple teriyaki burgers and finished with some delicious pineapple “butter” cake for dessert.

So, you are probably wondering why I have quotation marks around the butter in my title.  Well, it is because I didn’t use any butter at all in the cake.  Instead, I substituted Country Crock spread so there would be lower saturated fat and less calories but still have the delicious buttery taste I was looking for in my cake. It’s Good to Know that there are options for making desserts that are heavy on butter a little healthier.

The recipe called for melted butter {a total of 16 tablespoons!}.  Originally, I substituted the butter with Country Crock at a 1 for 1 ratio.  The cake ended just every so slightly dry with that ratio so I made it again and bumped up the Country Crock to a total of 17 tablespoons {don’t worry…I will be sharing the recipe soon}.  This worked perfectly!
