Peppered Salmon Stir Fry

I have a confession: While I try to focus on healthier eating and know I should incorporate more fish into my diet, I have a phobia of cooking fish in the house. You know…all those thoughts of the house smelling like fish for days! Well, I discovered Bumble Bee SuperFresh® and totally changed my mind! All of the varieties are great but I recently used it to make peppered salmon stir fry.

Peppered Salmon Stir Fry makes a quick, easy and delicious weeknight meal!

One of the awesome things about Bumble Bee SuperFresh® is that, even though it is frozen, you don’t thaw it at all so you don’t have to worry about those strong fish odors. Plus, the fish is high in protein and features rich seasonings with pure and simple ingredients, so it fits well into my healthier eating plans. The Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper and Extra Virgin Olive Oil came with its own parchment paper bag to cook it in so you don’t have to buy any extra cooking tools either. Just place the fish in the bag and bake per the instructions.

I threw together the noodles and vegetables for my stir fry in the time the fish cooked so we had a delicious, fresh tasting meal in under 30 minutes! It makes a perfect option for busy moms and cooks who still want a restaurant quality meal at home. I’ve even added in tips to keep make this dish paleo/gluten free if you prefer to follow that style of eating like I do. You really only need to simple ingredient swaps to make it a delicious paleo dinner. We are split in our family on the paleo versus non-paleo eaters so I make a little bit of both types for dinner many nights.

Peppered Salmon Stir Fry Ingredients:

1 package Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper and Extra Virgin Olive Oil
6 oz spaghetti {use zoodles for paleo and skip step 2}
1 Tbsp avocado oil
1/2 lb asparagus, cut into pieces
1 onion, roughly chopped
1 yellow squash, roughly chopped
Stir Fry Sauce:
2 Tbsp soy sauce {use coconut aminos for paleo}
1 tsp fish sauce
2 tsp ground black pepper
1/2 tsp Chinese 5 spice

Let’s Make It:

1) Preheat oven to 400 degrees. Place salmon pieces in provided parchment paper and place on baking sheet. Bake for 20 minutes in preheated oven.

2) Meanwhile, bring water to boil in medium pan. Add spaghetti and cook for 6 minutes. Drain and set aside.

3) In a small bowl, whisk together ingredients for stir fry sauce.

4) Heat oil in pan over medium heat. Add onion and cook for 5 minutes. Add asparagus and squash and cook for 2-3 minutes. Add spaghetti {or zoodles} and stir fry sauce. Toss to combine and cook for an additional 1-2 minutes. Serve salmon with noodles/zoodles and vegetables.
