One Pan Dirty Rice Skillet

You guys know all about our crazy schedule. Between 7 hours per week of gymnastics along with dance class, homework, and all kinds of other stuff that has to be done each week, making dinner can be hard to squeeze in. That is why our weekly meal plan always includes lots of easy recipes that can be made in less than thirty minutes like this one pan dirty rice skillet. 

One Pan Dirty Rice Skillet

Any recipe that is ready in under 30 minutes and only uses one pan is a huge win-win in my book. That means I have more time to actually enjoy my dinner with my family because there is less prep work to be done and whole lot less clean up too.

Ingredients for One Pan Dirty Rice Skillet:

1 1/2 cups quick cooking brown rice
2 1/4 cup water
1 bag small red potatoes, quartered
1 package Hillshire Farm Smoked Sausage, sliced
1 small onion, diced
1 red pepper, diced
1 tsp garlic powder
1 1/2 tsp chili powder
1 tsp cumin
2 scallions, sliced
2 Tbsp parsley, finely chopped

Let’s Make It:

In a large skillet, add water and potatoes. Cook for 7 minutes on medium-high.

Add rice, sausage, onion, red pepper, garlic powder, chili powder and cumin. Bring to boil and then reduce heat to simmer. Cover and cook for 10 minutes until rice is tender and most of the water has been absorbed. Top with scallions and parsley.

One way this recipe comes together so quickly is that I use Hillshire Farm Smoked Sausage along with the rice and vegetables. Right now, our Kroger stores have a Hillshire Farm Smoked Sausage on sale so I can get 2 packages for $5. The sale runs through April 19, 2016 so find your local Kroger and get shopping. Then, be sure to visit the Hillshire Farm website for recipe ideas.

    Definitely love one-skillet meals, and with the quick rice, you’ve really put together a dish that is delicious, quick, and satisfying all in one. I think I’ll add some peas and carrots along with the potatoes in mine and see how that goes (always trying to add a couple extra veggies when I can …). Thanks for sharing such a great idea!
